This one really takes 30 minutes, but I put everything in the crockpot and served it at a chili cookoff about 6 or 7 hours later with no problems at all, in fact I won the gold medal!

Chili is more forgiving than some other recipes and I think any of these should be ok for 8 hrs.
I don't use canned beans that often - I usually will soak dried beans overnight and cook them - how long depends on the type of bean, under an hour usually. The beans seem to hold up better and I know they taste better.
