    Hi everyone, I have, stupidly really, decided to hold a Mexican night tomorrow night for about 8 friends. Now we live in the far North of Scotland and Mexican food is hard to get here, if not impossible. So could you suggest a menu that would give an authentic taste of Mexican food but one that I could make from scratch myself, I can get hold of all spices etc and fresh limes, cilantro and chillies but not 'fancy' chillies LOL! It is just a supper for friends so does not have to be fancy. Thanks a lot

    Can you purchase corn tortillas? If you can then Diane Kennedy's carnitas is excellent. I've been making her recipe for a long time time and usually freeze in portions for later use. To see the process check this blog:

    I highly recommend her recipe. It's quite amazing and you can use the pork in many, many recipes. Serve this as tacos with all the fixing. And don't for get the margaritas on the rock!

    Thank you so much, I love that blog! I can't get corn tortillas here and only the horrid plastic long life flour ones but I may improvise. Thanks for your help.

    Lindsey, sub lefse or naan for the flour tortillas if you don't like the storebought ones. Or, you can make your own tortillas: Flour Tortillas and Soft Corn Tortillas

    If peppers are difficult for you to find, consider subbing Gebhardt's Chili Gravy for any of the sauces called for in Southwestern recipes.
