I make breakfast tacos all the time - I just scramble my eggs, warm up the flour tortillas and then pop in the scrambled eggs with salsa or guacamole or whatever I have handy. I don't usually have chorizo in the morning - yes, I know it's traditional - but sometimes pop in a slice of bacon. If I don't have salsa or guac, I'll sprinkle on some shredded cheese. Sprinkle on some seasonings. Whatever.... It's all good.

When I moved into my house a few months ago, my neighbor brought over a traditional breakfast from her country (El Salvador). It was a corn tortilla with refried beans and sour cream. Nothing else. It was very good and satisfying.

I hear you Bethie! One time I made a cookbook with all my tagged recipes w private notes of where I posted private notes of what game and when it was due. Really helped.

How about an easy one?


Try some leftover meat- we like shredded, sliced or chopped grilled chicken breast topped with a little of whatever veg we have available. Try cabbage! Baby spinach! Sliced squash even!

Or how about some left over steak or brisket. Same way! What an easy way to turn leftovers into a whole other meal!

Hey mama!

Twice this week, while learning to make tortillas, I've used sliced steak, onions and fajita seasoning for tacos. I tossed some quesadilla melting cheese in there as well. That is some goooood cheese.
