    What is the protein content of the all purpose flour that you are using ?

    Marriages S/R flour has a gluten content of 11.4% which is on the higher side of baking flour.

    According to the table printed on the packing;
    Protein 300mg/100g

    No indication on gluten.

    From manufacturer - protein is 11.4g per 100g or gluten = 11.4%

    Just rechecked the packing. Sorry I made a mistake

    It is Organic self raising white flour

    There is a sticker on the brown paper bag. The same was issued by W & M Marriage and Sons Ltd., UK
    The table is printed on the sticker. On the table it indicates 10.3g/100g. Sodium=300mg/100g. No indication on gluten.

    Your gluten is 10.3% . This is fine for cakes.

    Hi all,

    Baked a Banana Tea Bread according to;
    http://www.food.com/recipe/banana-tea-bread-272118

    Ingredients:-
    sugar (200g) (using less sugar making the bread less sweet)
    butter (115g)
    2 eggs
    1 teaspoon vanilla
    3 medium banana
    Marriage self raising flour (190g)
    sour cream (115g)
    walnuts (50g) chopped
    1/2 tsp cinnamon

    Steps performed:-

    1 Put sugar, butter and eggs in the mixer and mixed them at medium speed
    2 Hand-mixed flour, chopped walnut and cinnamon in a bowl
    3 Mashed banana in another bowl
    3 Added all above ingredients and vanilla in the baking pan of Kenwood breadmaker
    4 Started Program 8 - cake program
    Total cycle time - 1:22 hrs
    Kneading time - 0.08 hr
    Baking time - 1:14 hrs
    Baking temperature - 300 deg C

    A nice bread baked, soft and tasteful. Thanks
