    How to make the sauce for Greek Roasted Potato

    Hi there,

    When we go to Greek restaurants and order the entrees, which usually come with either rice or potatoes, with the tomato-look-like sauce on top. The sauce is kind of lemony. I wonder if anyone knows how to make that sauce.

    Hi there! Are you saying that the sauce looks like tomato sauce? I was initially thinking avgolemono sauce, which is a very pale yellow. When I roast Greek potatoes, I use olive oil, lemon, garlic, and oregano and usually cook them with chicken or lamb with that mixture. Perhaps the forum host, Evelyn, can help you out. If you could post a little more information (texture of the sauce, color, other spices you might have noticed), that would help. icon_smile.gif

    There was a recipe in my local paper for roasted lamb with potatoes and there is a tomato sauce that is poured over the tomatoes - here is that part of the recipe

    An hour before the roast is done (it's roasting at 375 deg), add 6 quartered potatoes to the pan. Mix 2 heaping tbl tomato paste with 1/2 cup warm water and pour over the tomatoes. Sprinkle with juice of 1 lemon, 1 tbl oregano and 2 tbl melted butter or olive oil. Roast for an hour.

    Hi PoMan. I'm having the same problem understanding that Lizzie-Babette is. Is it a tomato sauce you want, or a lemony (with olive oil) sauce?
