Meatless Sandwiches or brown bag lunch ideas

I pack my husbands lunch everyday as well as a young man that works with him. Our church just embarked on a 21 day fast and the young man is fasting meat. I send sandwiches with them every day on a large sandwich roll. With Brandon not eating meat (all meats, poultry, tuna, etc.), I am trying to figure out what to send for him for lunch. Tomorrow he will get a veggie sandwich, tues egg salad .... thats as far as I got  any suggestions would be GREATLY appreciated!! Thanks!

we make our egg salad w/chopped green olives and a touch of sweetener.
mix together: pb, honey, chopped dates, chopped apples, chopped walnuts .. yummy!
hummus w/pita chips, or, carrot/celery stix
fried egg sandwiches
on a hard roll, like a ciabatta, i use mayo with thinly sliced: tomatoe, dill pickle, cucumber, red onion, alfalfa sprouts and sliced or mashed avocado.. mmm .. our fav, even over meat!!!
on toast, mayo, avocado mashed up, red onion, spinach and tomatoe
why always sandwiches?
cottage cheese w/sliced bananas and sweetener
hamburger helper, but use mushrooms or tofu instead of the meat
tomatoes, mozzarella, cucumber, red onion tossed w/a good Italian dressing
Garlic Bread w/cheese - like a pizza, but no meat
Veggie pizza
Grilled cheese w/tomatoes, or, not

Stuffed Pita sandwiches are great. Feta, sundried tomatoes, spinach, artichoke hearts, onions, chick peas, black olives
Wraps are also great. You can add cream cheese, tons of cucumbers, olives, even nuts
Pumpernickel is great with cream cheese, apples, nuts, onions
Onions with a variety of cheese.
Veggie meatballs that he could reheat as a sub.
But rather than a sandwich, why not a thermos of veggie soup, there are tons of options, or even a stew. Many veggie stews
Eggplant subs are really good with cheese, tomatoes, mushrooms etc.
Hummus as mentioned is great.

Sharp cheese and chutrney on a hearty bread is good. Chick peas can be used to make a tuna salad-type spread, or made into felafel patties. Chopped pr pureed cashews with other tasty bits mixed in. Tofu eggless salad. Peanut butter and banana. Grilled veggies and pesto on a sturdy roll or ciabatta.

Excellent ideas, Thank you!! Just FYI - they only have a cooler, they usually eat in the truck - no access to a microwave to heat anything. Will definately try the thermos ideas though!! (I couldnt imagine eating sandwiches every day, blech!!)

I had just read in the Eating Clean an idea I've now been doing for myself & teenage son. We are both PB fanatics, so instead of the traditional PB&J - I used sliced whole fruit in place of the 'J'. I'm also a natural nut butter fan - it's quite yummy and even a whole new texture. So far have used strawberries (the front runner), peaches and pears.

I don't eat meat, either, and have really come to enjoy the Morningstar "faux" patties. You can get a "chicken" patty, a spicy black bean burger, a garden veggie---all excellent! My husband loves these as well, although he is NOT a vegetarian in general. Lots of lettuce, tomato, cheese, onion, mustard, on a good crusty bread or soft wheat bun---yummo!
Also, what about a grilled portabella mushroom sandwich, with goat cheese and roasted red peppers?

Hummus makes a good vegetarian sandwich base. Here are a couple recipes for the hummus and a sandwich idea:
Hummus from Dried Chickpeas

Hummus With Peanut Butter
Hummus Wrap With Tomatoes and Spinach
I often take a small container of hummus and a collection of veggie sticks and crackers or pretzels for my lunch.
Cream cheese is another good vegetarian sandwich starter. I particularly like it on pumpernickel, with or without lettuce or cucumbers. I also like it as a wrap with hot pepper jelly. These cream cheese spreads make a good wrap too:
Addictive Olive Spread
Chive and Onion Cream Cheese
If the young man is open to other cold lunches than sandwiches, there are a number of good things you can offer that need a fork. A lot of salads can be stuffed into a wrap or a pita pocket. Maybe some of these?
Grilled Squash and Artichoke Salad
Tomato-Mozzarella Salad
Tomatoes in Mayonnaise
Spring Pea Salad -- Just leave out the ham
Here's a sandwich that's a bit out of season but could be adapted:
Mostly a Tomato Sandwich With Basil Mayonnaise
And you can "man up" this recipe by putting onto hearty bread or rolls:
