    Tripas Tacos

    Newbie "Fry Cook" Poster
    Can anyone tell me how to cook Tripas or small intestine to make tacos.
    I bought it at the store and like to try really odd and different things, thinking i could just find out how on the internet, but not finding much help.

    The key to tripe is thorough cleaning/rinsing in acidulated water (water mixed with a little white vinegar). Then, boiling until tender.

    Not TRIPE the white honey comb stuff, But TRIPAS the small intestine of cows. I think there is a BIG difference.

    Never heard of it myself. Even the restaurants in my area run by people not that long from Mexico don't seem to have this type of dish.

    The directions are the same for either item: thorough cleaning, boiling until tender, then frying until crispy.
