I've made them and frozen with no problems. Just let them cool completely, put them on a cookie sheet and put the sheet in the freezer and once they are frozen, put them in a ziplock bag. I've had good luck doing it this way

Should they be defrosted in the refrigerator or on the counter and how long before I want to serve them should I take them out of the freezer? Thanks in advance for your reply!

I usually just defrost on the counter. I take them out the morning I want to serve them and let them defrost.

In Taste of Home Thanksgiving issue 2012, they have several cookie recipes (not the peanut butter recipe in particular) where they say freeze cookie dough raw. I was surprised to read that they recommend for sugar cookie cut outs -- to cut out the cookie, put it on cookie sheet, freeze it raw, and then bake frozen allowing extra baking time. Wish I had known that years ago.
