Matzoballs fell apart - what happened?!

Experienced "Head Chef" Poster

I've made matzo ball soup for years and never had a problem. I made it this weekend - and my matzo balls totally fell apart. It was matzo-mush soup! What happened?

That would do it. As horribly stale matzo may feel, the matzo meal needs to be fresh, fresh-ish. Around Rosh Hashana time I found some matzo cake meal in my cupboard, and didn't want to throw it out, so I made a lemon sponge cake with it, blech! Same thing came out beautifully on Pesach.
