Not too brag, but our weather is glorious.
Four months from now it will be the other way around.

    Sourdough baguettes:
Tried a new recipe, flour is mixed with ice water, refrigerated for 12 hours. Then it's mixed with the sourdough starter, fermented for 2 to 3 hrs with stretches and folds and refrigerated again for 24 hours (I pulled it at 18 hrs).

Thanks, but my baguettes have a ways to go. I got the recipe at your old neck of the woods. You're a legion there.

Thanks, they taste terrific, have good crumb, but are still butt-ugly. icon_lol.gif

    So Tasb,

I'm trying to imagine baking 12 loaves in a day. Is that done in 3 batches, 1 batch or what?

I was wondering the same thing. Three is the most I've ever done in one day.

I made Ricotta Cheese Cookies last week for dessert for an Italian meal. WOW DH loved them.

Also made French bread, but this morning I made Schnecken (Sticky German Cinnamon Buns). they are about ready to go into the oven. Can't wait to try one.

Our eight inches of wet, heavy snow made me want to try something new. Just took the dog out and it is all ice underneath. We had 50's yesterday. What a change.

I'll try those ricotta cookies after we finish all the Walker's we received for Christmas.

3 - 4 inches of fluffy snow here. Really easy to get rid of with the snowblower. Didn't take long at all.

Do those ricotta cheese cookies taste at all like vanilla wafers?
That's something we can't buy in Australia, and there's no equivalent.
Better put on my apron—but after I've bicycled to the gym and back, and
    done the exercises too.

All at once. I made the dough in 2 batches with the KA. Mine can handle 6 lb of dough at one time and boy do I make it mix that much at one time. I have 12 mix and match bread pans from when I used to make the 12 loaves by hand. Each loaf is about 1 lb each, so they aren't very big at all. I do want to find some professional pans soon because these ones are very thin metal and rust if I don't dry them properly after washing.

Today I also made 5 loaves Banana Bread, using BH&G recipe. Brought a bunch of bananas home from work and the kids have requested banana bread so I made as many loaves as I could. 2 are sliced and ready for snacks this week and the other 2 found room in the freezer. I used about 50% whole wheat flour in them, and no complaints from the family as they don't know about it.

I found if the baked goods don't have to be white, like white bread, shortbread cookies, and pie pastry I can get away with about 50% whole wheat. I have even used 100% whole wheat in things like Fruit Crisp.

I love those ricotta cheese cookies Adopt a greyhound! I make then and dip them in melted special dark chocolate chips. They remind me of the Milano cookies that Pepperidge farms makes.

Aebleskiver for watching football this past Sunday.

Recipes are from: Crafts, Kevin. Ebelskivers. Filled pancakes and other mouthwatering miniatures. San Francisco, CA: Weldon Owen Publishing, 2009.

Very easy to make. My wife wanted me to add more lemon curd filling next time.

Chicken Bites with Buttermilk Dressing. A savory aebleskiver. Just a basic aebleskiver recipe, deleting the sugat and adding a minced shallot and 4 ounces chopped, cooked chicken.

    Lemon-Curd Filled Aebleskiver.

    Lots of leftovers. icon_smile.gif
