Does anyone have recipes for this pan?

Hi, kdkyan! Welcome to Gadgets!
I'd never heard of a La Cotta pan, but now that I have, I am going to be on the lookout for one, either locally or on Ebay. I found a couple blog posts that give good information about this brand/type of pan. Made in Italy, out of volcanic rock, it dry cooks meat without drying it out.

The first link here, the blogger posted her instruction manual, which may have some recipe ideas in it. If not, it sounds pretty easy to use. Rinse the pan in water, put in your meat (one suggested sprinkling the pan with coarse salt first), prop the upper lid open a bit (with a fork), and cook til done. No sauces required to mask dried out steak.

Well, my interest was piqued.... Anyone who frequents this forum will probably just laugh at me, but I found a La Cotta pan on Ebay and made DH bid on it.
It's on it's way here and I can't wait to give it a try!

Yep! We got it the day before leaving for Disneyland. We got home this week, but all I've had time to do is wash it. It smelled a bit funky and it looks like its been more of a wall decoration than a cooking utensil. We've been trying to catch up on laundry, gymnastics, school, etc. since getting home and I've only had time to pick up a few staples at the grocery store. Hopefully, in the next couple weeks I'll have a chance to figure out what recipe to try it out on. I'll be sure to update you all when I do.

I'm afraid it's going to be even longer til I get to test it out. My 19 year old was in a near fatal car accident last week and all other plans are on hold for the time being.

I read the blog about the pan and found it interesting, can't wait to see how Tink liked hers, but fried twinkies - now that sounds interesting.

Hi all! Here are a few photos I just took of my pan. I still haven't used it, and I know I keep saying that I'll get to it, but I promise I will. I'll buy a steak today when I go shopping and I'll cook it up in the next couple days.

Nick is doing okay. He has a steel rod and 8 pins in his femur, his broken ribs are healing nicely, but yesterday's dental assessment (for the 2 teeth he lost) was a bummer. Now we find out he broke his jaw also. Don't know what it's going to cost or how much time it'll take to fix that mess now that it's been a month since the accident.

How did you make the fried Twinkies? The pan doesn't seem deep enough to me, and since the manual says not to use oils, butter or fat in it, I'm wondering if you dry-fried them? If that's even a method.

I got a tip recently that Hostess was closing down. I haven't eaten anything Hostess in years, but I did go buy two boxes of Ding Dongs to put in my freezer. LOL
You might want to stock up on the Twinkies too!

That poor kid, I had a fx femur years ago requiring a rod and pins and know how awful it is - then add all the rest to it and he must be one brave boy. Won't the insurance cover the expenses? Here's prayers and hoping he recovers soon

Yeah, we've got insurance that's kicking in, and he's recovering nicely.

Okay, so I have officially broken in the La Cotta pan!

Umm.... the jury is still out.

I only cooked half of the steak last night, and planned on cooking the rest of it tonight. However, the smell of the pan itself when it heated up....
*sigh* How can I possibly describe this?

Imagine, if you will, forgetting a load of laundry in the washing machine for several days. (Okay, yes. I've done this! )
And then instead of washing it again to get the moldy smell out, you just stuffed all the clothes in the oven to dry them.

The La Cotta smelled like moldy clothes cooking on my stove.

My house STILL smells disgusting. But the steak was nice and tender, so I'm not quite ready to give up on it just yet.
I took some photos and will do an official post when I'm finished experimenting with it.
I just wanted y'all to know that I hadn't forgotten about, cause It's just been so long since I got it!
