    Frying or deep-frying catfish

    Newbie "Fry Cook" Poster
    I live in Canada where catfish is a rare commodity. Having tasted it (and lovin" it) while on vacation in Florida, I hunted some down and now have two, 2 lb whole fish in my freezer. Would appreciate suggestions, tips, recipes on how to prepare them fried or deep fried.
    I have the filleting thing covered but should they be skinned or cooked skin on? Any info is welcome.
