it is really good and is the first time in my life i had been around anyone from the middle east , it was eye opening and i wanted to learn more. my dad was in marine corps and i was friends with alot of people from the far east , but this is a different culture which as i learned about found things i really liked

I'm enjoying the different cultures as well, however I'm not from the Middle East, but for you I'm the Far East as I'm Swiss with Italian roots. Europe is for you East!
Well, during the last month I had a lot of food that I would'nt have prepared without this forums!

Q: Does anyone know if it is best to use long, medium or short grain rice for this dish? Your thoughts?

Q: Does anyone know if it is best to use long, medium or short grain rice for this dish? Your thoughts? we need people more knowledgable than me  when we find out i can put in recipe ,i was looking for recipes for think pink and i found 2 rice dishes that fall in this region also win win for me

I think I'll use medium grain.

I don't think Iraqis use short grain rice. I also think it has Persian (dill) influence and I think the Jews of Iraq lived nearer Iran which would make sense. So medium to long grain sounds like a better choice.
