    ~ Shrimp are a popular ingredient in many Spanish dishes, perhaps the most popular being Paella, widely known as the national dish of Spain.

    The term ‘shrimp’ first appeared around the 14th century with the Middle English ‘shrimpe’ (meaning ‘pygmy’) which is akin to the Middle Low German ‘schrempen’ meaning to contract or wrinkle, and the Old Norse term ‘skorpna’ which means to shrivel up. They are cultivated in many parts of the world and are a quite common import and export commodity throughout the world. The total global production of farmed shrimp reached more than 1.6 million tons in 2003, representing a value of nearly $9 billion in the U.S.

    Shrimp or Prawns ?

    ~ Shrimp are classified as decapod (meaning “ten-footed”) crustaceans (whose skeletons are on the outside of their body). They belong to the Caridea order, and are found in both fresh water and salt water in many areas around the world.

    Is it shrimp or prawn (gambas or camarones) ? Although shrimp and prawns are similar in appearance, they both belong to different suborders of the decapod groups. However, the terms are largely interchangeable in the farming and fisheries industries. The same holds true as well for consumers in most parts of the world. For instance, in the Spanish language, the term ‘gambas’ is generally used to refer equally to most species of shrimp and prawns, though in some Latino communities they more often use the term ‘camarones’ (though it technically refers to a specific variety of Northern Shrimp). Similarly, in most regions of North America, the term ‘shrimp’ is more common on restaurant menus than ‘prawns’, while the opposite is the case in the United Kingdom, Australia and most Commonwealth nations. (When actor Paul Hogan was featured in a popular TV advertising campaign that aired in the U.S. years ago, he used the phrase, “I’ll slip an extra shrimp on the barbie for you”. Though the choice of language was a distortion of the typical Australian language, the change in terminology was intended to be more appealing and familiar to his American audience.)

    Selecting and Preparing Shrimp

    From small to COLOSSAL, shrimp come in a variety of sizes and types. Depending on the species and location, shrimp generally grow from just under half an inch to 12 inches (about 1.2 to 30 centimeters), and they generally live between 1 and 6 years.

    Determining how many shrimp to prepare will largely depend on the shrimp’s size, but generally it is recommended to plan for 1/3 to 1/2 pound (shelled) per person. As a general rule, the colder the water of origin, the smaller and more succulent the shrimp. Shrimp are highly perishable, so plan to purchase shrimp no more than a day or two in advance. However, if wrapped adequately in a sealed bag and kept in the coldest part of your refrigerator, they can last up to 3 days. And they freeze well, and can be stored (well wrapped, to protect from freezer burn) in the freezer for up to 6 months.

    Classifying shrimp by size can vary a great deal among suppliers, but generally a reliable table for calculating count size (per pound) is:

    Colossal – 10 shrimp or less
    Jumbo – 11 to 15 shrimp
    Extra-large – 16 to 20 shrimp
    Large – 21 to 30 shrimp
    Medium – 31 to 35 shrimp
    Small – 36 to 45 shrimp
    Miniature – about 100 shrimp

    ~ Preparing shrimp for cooking involves removing the head, shell and tail. Although it is largely personal preference, most people prefer to de-vein shrimp as well by cutting a shallow cut lengthwise down the outer curve of the shrimp’s body and using the tip of a sharp utensil to lift the dark vein and grabbing it to remove it. Always rinse shrimp well under cold running water for several seconds to remove remnants of sand and grit.

    Health Benefits

    As with other seafood, shrimp is high in calcium, iodine and protein but low in food energy. However, shrimp are considered healthy for the circulator system because of the lack of significant levels of saturated fat. So, although shrimp are high in cholesterol, a shrimp-based diet can actually improve the ratio of LDL to HDL cholesterol levels and lower triglycerides.

    Shrimp and other shellfish are among some of the most common sources of food allergies. They are not kosher and therefore are forbidden in Jewish cuisine. On the other hand, shrimp are halal and according to some madhāhib, shrimp are often permissible in Islamic cuisine.

    Cooking With Shrimp

    Shrimp and prawns are versatile and lend themselves to a variety of common methods of preparation including baking, boiling, frying, sauteeing, and grilling. For some, the very best way to enjoy shrimp is to eat them raw and fresh, often served with savory sauces or dips for added flavor.

    ~ In Europe, shrimp is very popular, forming a necessary ingredient in Spanish Paella de Marisco, Italian Cacciucco, and Portuguese Caldierada, and a plethora of other seafood dishes. Shrimp are also a favorite addition to chilled greens for a wonderful fresh seafood salad. One of the most popular shrimp dishes in many parts of the world is the classic Shrimp Cocktail appetizer.
