    Hi
    I'm looking for ideas for solo camp/trailer meals...mostly especially dinners. I'm toying with the idea of going up to our trailer next week and spending 4 dinners worth of time there on my own, and I'm having problems figuring out what to eat. To cook with I have: a propane barbecue, a cookstove, a separate propane grill unit that's mostly used for breakfasts and a standard 'fridge with freezer. There really isn't any ethnic class of food that I don't like and I'm an experienced cook so there really isn't anything I can't do. I would prefer to not use a lot of convience foods because of the added expense and I try to not use them generally because I can probably make a better-tasting equivalent from scratch.
    Any suggestions are greatly appreciated

    I hope you enjoy your trip.

    What a lot of people do when faced with the same situation is prepare (at home, where they have access to a much wider array of equipment) a sufficient number of dinners in advance. And they store the prepared dinners in gallon-size zip-lock bags or plastic containers until it's time for the trip. And then they just re-heat them while on the campground. Especially when time is a matter, such advance preparation makes it much easier for the camper.

    Otherwise, here are a few more other ideas (besides the great recipes that Dreamer already provided)...

    Thanks for your suggestions. Things didn't go completely according to plan and while I did go it was really last minute so my menu ended up being rather 'catch as catch can', but I really liked the chicken and peach salad idea so I created my own on the fly. Thanks for responding.
