Osso Buco is pronounced Ah-so-boo-ko. I love just saying the name. "I'm having Osso Buco tonight. (big grin.)
My intentions this last weekend were noble, but the shops I looked at in my town were devoid of veal shank or lamb shank. But...they had gread beef short ribs. I combined a number of recipes here on Food.com but basically I coated the ribs lightly and browned them before placing into the crock pot. I deglazed the pan with broth and wine and cooked it for a little while. Italian spices, garlic and lemon zest were added and this braised for 8 hours on low. I tried to degrease the stew and thickened it and served over brown rice, this was marvelous! No photos, but man it was good.
So, grab a good recipe and go with what you got. Osso buco and short ribs in the crock pot rocks!

You create great new recipes when you improvise that way. I ended up using veal liver instead of veal cutlet in a recipe I made yesterday, mainly because the package was not clearly marked, but as it was thawed, had to use it up. It ended up working very well, with some modifications to the cooking. The more you cook, the more you are able to make these types of adjustments.

Yeah, I love calf's liver and it was commonly served at our table when I was young.
Today, however, the rest of my family considers it offal.....uh...awful.
