Coconut Milk Made Into Whipped Cream?

I remember seeing a post somewhere in the forums about using coconut milk to make "whipped cream." It was something about taking a can of coconut milk, draining the milk, whipping the coconut fat and chilling it, or something like that! Can anyone redirect me to this? Thank you!

I do remember that! Gingersnap in Midwest posted it in this thread:

It's the "does anyone know any websites that review veg*n products" thread. But your description is pretty much what she suggests. Just add some sugar and vanilla.

You can actually buy whipped cream stabilizer but I whip it with chilled beaters and bowl until it's quite stiff then put in a couple of Tbsp. of icing sugar. Holds up pretty well, especially on top of Spanish Coffees. Make sure you buy 35% whipping cream, not the other ones. Cheers!
