Happy Canada Day to all our Canadian friends!!!! I've been keeping busy with work and baseball and the ZWT. But the tour is coming to an end, so more "normal" recipes...haha! Here's my menu! Share yours!!! Saturday - 50th Birthday party for some friends...no cooking! Sunday - My DS's 18th Bday! All request dinner!!! Roasted Garlic Mashed Potatoes - the Best You've Ever Had, Sugar Grilled Asparagus, Caesar Salad, Chicken Pesto Pillows, Honey Bun Cake Monday - 4th of July!!! Smoked Ribs and Chicken, America's Test Kitchen Cheesy Garlic Bread, Potato Salad, Greek Isles Salad Tuesday - Bobby Flay's Chinese Chicken Salad W/ Red Chile Peanut Dressing, using just the dressing part, over my choice of greens/vegies Wednesday - Tostadas and rice Thursday - BUNCO!!!! Boys are on their own! Friday - out to eat! Hi,
I am ready early because I have to shop earlier than usual (and I found a few spare moments to rub together today!). Sat - some kind of easy pasta salad with canned salmon and chickpeas and broccoli Sun - gone for a mini-getaway Mon - burgers, corn on the cob or oven fries, veg Tue - Yakisoba Chicken with soba noodles Wed - made-up soup with greens, onion, white beans, and poached egg, plus flax bread and cheese Thu - Salmone Alla Toscana except I will omit the sundried tomatoes, and I am likely to just throw it all together and cook the whole thing on the stovetop; with zucchini and brown rice Fri - Chicken Marsala With Basil and Mushrooms except I will probably add dried mushrooms and use fresh basil; with egg noodles and asparagus Now I need to go out and see if I can get my tomato plants to stand up a little better. Happy Safe Fourth to All, me, nothing special ... just a BBQ for some friends on Sun. Low key and easy, good food and friends. ------------------------------------------------------------------------------ SAT ... Invited to a neighbors birthday party. I offered to bring something and they said - appetizer - about 10 of us. But they are very plain simple and not too much into food. Lasagna is gourmet for them. I mentioned a few things and 90% of them they had never heard of ... so simple it will be. Their suggestion - cheeze whiz and crackers or baby wieners in BBQ sauce, so we will see. Soup Day: A day early, a lemony zucchini soup I didn't make last week Bread Day: Wheat with garlic and herbs ---------- SUN ... BBQ with about 25 friends Appetizers: Tequilla oyster shooters Antipasto skewers, with salami, proscuitto, artichoke hearts, marinated mushrooms and cheese Sarasota's Healthier Deviled Eggs W/Ham and Capers Ham & White Cheddar Dip Baked in a Bread Bowl Baked olives ... a mix of 3 olives, mixed with fennel, onion, lemon, olive oil and capers, baked and served warm or room temp Vodka Watermelon (one of the guys is making this) And the fruit tray will be out from start to finish I'm also setting out some skewers of 3 different cheeses for the kids or adults who just want plain cheese. I know most of their kids love cheese Main Course: Smoked ribs with 2 BBQ sauces (white and spicy mesquite) Smoked chicken, served with rolls and pickled onions and dill pickles Tomato Feta Salad FT's Layered Mexican Salad, served with tortilla chips and mini tortillas Minted honeydew and cucumber salad in a bowl surrounded by watermelon, strawberries and grapes Caramel Apple Salad, it will be out for the main course or dessert Kids: Hot Dogs, grilled Baked Mac and Cheese (one of the Moms who has a youngen is making a pan for the kids) For the youngest, PBJ, cut in small bites (one of the Moms is doing that for me) Dessert: One lady is making light lemon cupcakes and she makes a light glaze and tops with a strawberry and blueberry fruit glaze. They aren't sweet, but really good Caramel Apple Salad, it will be out for the main course or dessert I'm cheating using a mix for brownies, I'm making 3 pans. 1/2 with nuts, 1/2 without ---------- MON ... Lady #1 and #2: Vacation for the 4th Me: Soup night, and a portabello sandwich with roasted reds, cheese, onion and a basil aioli, or I may just eat ribs if there are leftovers ---------- TUES ... Baked breaded pork chops (no real recipe); tomato slices; and a yellow squash casserole (make it up as I cook). I love one recipe, but it is very "FAT"with sour cream / cheese. I think I will go a bit lower fat. ---------- WED ... Lady #1 and #2: Red Wine Pasta, Broccoli Rabe & Grilled Herb Chicken; roasted cauliflower on the side Spicy Sauteed Shrimp (recipe made on the spot) over pasta with grilled romaine and a anchovy bread ----------- THURS ... Couple #3: Company, family in town Me: Work so it is leftovers ---------- FRI ... Lady #1 and Lady #2: Not sure, may be out of town, may have company, I will find out later this week. Me: Out! or a friend and I will rent a movie and make Chicken roll-ups, stuffed with feta, spinach and olives; a side of of orzo and fruit. It's not set in stone yet ... up in the air. ------------------------------------------------------------ Breakfast: Yogurt, cottage cheese or fruit as always Lunch: Soup and leftovers And ... make sure to clean out your pantry, fridge and freezer ... there is a dinner waiting to be made! It is so nice to see Grandmas and pas, moms and dads, sons and daughters,. grandkids and best friends, I guess that is what BBQ's are all about. It isn't anything fancy, but just fun. Horse shoes, football, the pool, frisbee. Normal stuff. Just fun Finally a quiet week for us.
Sunday: Grilled pizzas! Loved them so much last time, we're doing it again! Looking for some good topping combos - the kids will stick with plain ol' pepperoni and cheese. Monday: It's the Fourth, and the kids have made the menu. Grilled hotdogs, baked beans, corn on the cob, watermelon and chips. Tuesday: Gotta use up a round steak in the freezer, so it's Onion Steak, mashed potatoes and some sort of veggie - gotta work on that part still. Wednesday: Leftover night! Thursday: Ravioli and salad Friday: Easy, hot summer night dinner. Yogurt parfaits, fruit salad, toasted homemade bread, fresh tomato slices, etc. Cool, no bake, easy to make dinner after work. Saturday: BBQ pork sandwiches, pasta salad, fruit. Have a great week, everyone!!!

Monday: A pork loin that I'm dethawing in the fridge and some kind of couscous. Tuesday: "Lynn's Favorite Jerk Chicken" and "Cuban Crushed Potatoes" Wednesday: "Dayak-Style Shrimp (Kalimantan)" and rice Thursday: "North African Meatballs" and ? Friday: No idea yet.
