    A Vegan Cookie Challenge

    Hey everyone wave.gif

    A year back or so I finally bought I.C.Moskowitz and T.H. Romero's wonderful book "Vegan Cookies Invade Your Cookie Jar", but so far Ive only made one recipe out of it. I was always too busy and only managed to write a long list of favs that I really want to try out.
    Well, I figured now is as good as any time, so Im challenging myself to make one of the recipes out of their book each week. So far Ive planned 5 weeks ahead, but might continue after that time permitting (Ill be on an internship then, so dunno about my schedule).
    This week Ive tried a real WINNER: Vegan Cowboy Cookies. yummy.gif

    Great idea Loula! Just found this post too - I've been a wee bit occupied with the ZWT.

    Those cookies all look fantastic! IF there is a gluten free one in that book that you're planning to post, I could test it out!

    This week I decided to make a classic oatmeal raisin cookie. The healthified version turned out very cake-like and soft with a chewy centre. I really liked that and the taste was awesome with the perfect balance of cinnamon, fruit, oats and vanilla for me. yummy.gif

    Do you have any vegan or non vegan favs? Id luv to hear about them!

    Magpie, yes, there are some cookie recipes in the book that are specifically gluten-free, but the great news is that the authors say that you can use any of their recipes with a gluten-free flour mix. They also give their own mix, Ive been meaning to try it out and post it, just haven found the time yet. If youre willing to try it and a recipe or two, Id be happy to post them for you. Cool idea! icon_cool.gif Are there any cookies you like best?
    If I may ask, are you intolerant yourself or just trying to avoid wheat and other grains?

    I'm trying to stay away from desserts again now that zwt is over (not always successful) as I've been dieting.

    Hi Loula! I wish I were closer to be able to raid your cookie jar icon_wink.gif

    The gluten-free switch is very recent. The main reason is because of the link between gluten allergies/intolerance and inflamation & asthma (which I have). It can also interfere with your iron absorbtion (& other nutrients), which has been an on-going thing for me. So my naturopath has recommended I give it a solid effort for a few months and see how I feel. I must say, so far I think it is a good thing, I've had fewer asthma flare ups.

    Making that switch hasn't been too difficult for me, I was dabbling in wheat free for a few years since my mum doesn't eat wheat. It gets tricky finding pre-made products or menu items both gluten free & vegan, so finding something to eat at say the school cafeteria has become near impossible! icon_smile.gif More incentive to brown bag it and be prepared with snacks. Like cookies!!

    So I'm game for giving one of the recipes a shot for sure - zmail it over or I'll send you my email.

    I haven't tried to make these gluten free yet, but here are a few faves:

    Well, there are literally thousands (even hundreds of thousands, I would say). So, do you have any specific type of cookie in mind, like say choc. chip, pb, oatmeal, fortune, thumbprint, etc. etc.? It would be helpful to know what you like. icon_smile.gif
