For the Pacific Gluten Free Challenge I made Macadamia Nut Cookies #369941 by Maryland Jim gluten free. And how glad I am I did that - ! These cookies are fantastic, and the gluten free flour can be used 1:1 for normal flour.
Sorry, no pic - I only made 1/4 of the recipe because I didn't have enough unsalted macadamias (they're difficult to get in Germany) and there were too many people who ate them up within 30 minutes icon_eek.gif icon_lol.gif

For the Golden Gourmets, 3 of us have done the challenge but page 1 only shows 1 of us. Is there a reason? icon_biggrin.gif

For the gluten free challenge I chose to make Javanese Roasted Salmon #100473 by mary winecoff. I used gluten-free soy sauce instead of regular. I was curious about the cornstarch, but after looking it up, it already is gluten free. The sauce on this is fantastic and I think it could be used on just about any protein.
