Man, that does look good.
If the ingredients are precooked, I think the crockpot would be fine for bringing everything to heat and melting the cheese. I'm guessing at 3 hours on low.
If you are wanting to toss the potatoes and onions in uncooked, then much longer times would be needed and you'd still need to precook the bacon as it'll get soft over a long cook. I'm concerned about the fate of the cream, mayo and cheese with a long cook. While these ingredients may break over long cooks, I have seen recipes that called for sour cream, mayo and cheese at the start of the cook.

So, I'd either preheat everything and warm it in the crockpot or I'd cook the potatoes and onions (low for 5 hours I guess) and add the remaining ingredients and cook for 1 or 2 hours more. Let us know how it goes.
