Oh my I totally understand! If my DH could have pizza delivered that's what he would opt for.
I am assuming you have a cooler (for the sausages) so that helps.
For breakfast you could probably make oatmeal over the campfire. Add fresh fruit diced up on top for a healthy and filling meal.
Another option would be Oatmeal, Bran, or whole grain muffins. These can be made ahead and brought along.

Avocado and Tomato Wraps
Hummus and Veggie Wrap
For Dinner:
Any lean protein
Assorted Veg already cut up in ziploc bags
Grill the protein and then you can wrap the veggies in foil packets seasoned as you like and roast over the fire
