    Lemon Sqare recipe from Company's Coming

    Does anybody have the lemon square recipe from the Company's Coming 150 Delicious Squares? She has two lemon recipes in the book - I think it's the first one and I can't remember if it's slice, bar, or squares - I made this years ago, remembered it and lost the recipe! And the book. Sheesh. This is the recipe with the graham cracker crumbs on the top ( and the bottom, I think?) It was reeally good.

    Hi Semra - I have the book and there are a few in there. One is called
    Lemon Slice and I think that is the one you mean as it has graham crumbs on top and bottom. It has a second layer that is cooked in a doubler boiler and it consists of sugar, egg yolks and lemon juice.

    If that sounds right, I'll post for you if not already on this site. icon_biggrin.gif

    Okay, there is another one that has coconut in it.
    Another has condensed milk in it.

    Yes, the lemon slice is it! (I was pretty sure it was named the lemon slice.) Yes, Jean must really like lemon! I do too icon_biggrin.gif If you could post it I would be really grateful - I searched for it here but couldn't find it.

    I did a quick search and I don't think it is on here either. As I have never made it, I won't post it to the data base but if you want to, please feel free to do so. Here you go:

    First layer
    1 Cup Graham Cracker crumbs
    1/2 C butter or margarine
    1/2 C sugar

    2nd layer
    3/4 C sugar
    1/3 C all purp. flour
    1 Tbsp water
    3 egg yolks
    juice and rind of one lemon
    3 egg whites
    handful of graham cracker crumbs

    My other post got cut off, here's the directions.

    First layer - Crumble first 3 ingredients together until mealy and press into
    ungreased 9x9 pan. Bake 10 min at 350F

    Second layer - In double boiler combine second amount of sugar, flour, water, egg yolks, lemon juice and grated rind. Cook and stir over boiling water until thickened.

    Beat egg whites until stiff and fold into hot thickened mixture. Spread over cookie base.

    Sprinkle with crumbs. Bake in 350F oven for 3 minutes or until set. Cut into 36 squares.

    Dibs- I contacted customer service because I was trying to search the data base and couldn't get graham crackers to show up in the sifter ingredients. This recipe may be on here already and I hate to see double posts. Once I get an answer we'll see if it needs to be put in. If you can get it to work though, let me know.
