    Egg recipes, please!! I'm looking for some fun, different recipes involving eggs. I'm more or less looking for dinner/lunch sort of things. I feel like I want to be creative with this, but I don't really know what to make. And 'egg recipes' turns up too much breakfast or quiche!

    Edit: And I don't mean just like fried rice or that sort of thing... Along the vein of pizzas with eggs baked on them and that kind of stuff.

    Chicken and Shrimp Carbonara is one of my favorite egg-based recipe. It is from Caruso's Italian Ristorante in Phoenix.

    Hahaha, those egg pictures are a crack up! (I went there.)

    Thanks guys, some of these recipes look interesting. I already poached some eggs in tomato sauce and served them over rice today.... That was pretty fun. Eggs are just something I've never explored! But they're so versatile and a cheap form of protein. =D I also eat very few forms of meat, so... maybe this will be good for me.

    Here's a recipe that's a bit different:

    Egg in a Potato Nest

    These are different and can be served with pasta sauce or just plain.

    FRIGALETTI (Egg Balls) serves 6
    3 eggs
    Salt and pepper
    3 tbsp grated Parm or Romano cheese
    1 tsp fresh minced parsley
    6 tbsp bread crumbs
    Olive oil for frying

    Beat eggs. Combine eggs with the remaining ingredients except oil.
    If batter is too wet, add more cheese and/or bread crumbs, a tsp at a time.
    Heat oil in frying pan. When hot, drop batter in the hot oil by teaspoonsful.
    When egg ball is nicely browned, simmer in spaghetti sauce.
    Or serve plain at breakfast.

    My kids prefer them plain. I do too... with maple syrup.
    My balls never stay round, but get a little football-shaped.

    Is this another scripps networks error, 500 Administrative error from Food.com, or what?
