    Spring Onions are also known (in various regions and countries) as scallions, green onions, salad onions, bunching onions, and green shallots. They are in the same genus (Allium) as leeks, garlic and chives.

    The upper green portion of the Spring Onion is hollow. Harvested for their taste, Spring Onions are milder than most other varieties of onion. They may be cooked or used raw as a part of salads, and are a staple in many cuisines including Spanish Cuisine.

    In America, what is considered a Spring Onion has a slightly more rounded and defined bulb and is typically larger than the slender and more delicate green onion. The flavor has more “bite” than a green onion and is somewhat hotter than a green onion. They can be used much like green onions, though you need to remember that they are slightly stronger.

    Selecting

    Select bunches of Spring Onions that have firm leaves, a vivid green color, and a firm bulb that may be either white or purple (there is little difference in flavor between the two). They will store in a perforated bag in the refrigerator for several days. They don't last as long as regular onions and, like scallions, will turn slimy.

    Health And Nutrition

    The nutritional value of Spring Onions makes them ideal for maintaining healthy eating and for weight loss efforts.

    Spring Onions are low in saturated fat, sodium, and cholesterol. In addition, they are high in dietary fiber, and they are an excellent source of Vitamin A, Vitamin C, Vitamin K, Folate, Calcium, Iron, Potassium, Manganese, Thiamin, Riboflavin, Magnesium, Phosphorus and Copper.

    Culinary Uses

    To prepare Spring Onions, soak and wash them thoroughly with cool, fresh water to remove all dirt and sand. Trim off the roots, then cut off the top of the greens and slice the bulb portion into thin rounds.

    Diced Spring Onions can added to color and a mild onion kick to soup, noodle, egg, and seafood dishes. They are can also add a bit of color and a mild onion flavoring to salads, sandwiches, curries and stir fry dishes. And they can be chopped and sautéed with vegetables, meats and other foods to add extra flavor to savory dishes.

    Some useful and tasty ways to cook with Spring Onions include . . .

    Glaze onions in a sauté pan and serve as an agro-dolce appetizer

    Reserve the tougher green tops for use in vegetable or chicken stock

    Stir into mashed potatoes to make the classic Irish dish, champ

    Caramelize and purée them in a creamy bisque

    Until today I *never* knew there was a difference between scallions
    and spring onions. I need to get out more often.

    I have many recipes using scallions/green onions but as far as I know not recipes that are specifically Spanish or Portuguese. Here is a small sampling:

    I"m also a big fan of purple scallions which I am able to find locally at our farmers' markets in the summer.

    Funny you should mention this. I knew that there was a difference, but have always seen them labeled as the same.............until yesterday..... I actually saw the fatter-bulb-bottom spring onions labeled as that and scallions on the shelf below. First time that I've ever seen that at a grocery store.
