    As you can see, Aji Sauce is green. It's also addictive. Aji is to Peruvians what Mojo is to Cubans. A must have condiment. There are also as many recipes for Aji on the web as fleas on a camel. Just about every recipe has a secret ingredient, or so the posters say. I love it served over shredded pork or chicken that has been wrapped in a warmed corn tortilla with a little dab of sour cream as well as some sort of sharp cheese, and I'm pretty sure I could eat my weight in it too!

    If you like heat you will love this stuff!
