    I am trying a gluten free diet (my 4th day!) and I just bought some Gluten Free Bisquick. I read some mixed reviews of it online, though. Has anyone tried it and if so, what is a good use for it? I've really enjoyed reading this forum!

    I've never seen gluten-free bisquick..........but bisquick really is a US grocery item.

    My guess is that you could try it in any recipe that uses bisquick as an ingredient. I would imagine that it already has some gluten-free gums or stabilisers added

    Hi Roxygirl! Hope all is well with you. I started a gluten free diet about 6 weeks ago. Wow what a difference! Yes, I have used the gluten free bisquick. I used it make the shortcakes for peach shortcake. Like most gluten free products it does spread somewhat but not to much. They were very good shortcakes and no one knew they were gluten free until I told them.

    I was so excited to get your message. I looked at your recent reviews and love your photo of buckwheat bread. Your photos will be a huge help to me and I will appreciate every one of them! I zmailed you twice (I kept messing up on my new computer and it kept sending it before I was done, hence the abruptness in them!). I am so glad to hear about your Bisquick experience. I have one box and have been waiting to use it, till I knew what to do with it. I read some conflicting reviews of it online. I may try it tonight making the Impossible Chicken and Broccoli Pie. I saw the gluten free recipe on the Betty Crocker website. I was disappointed that you can't just sub it out for any Bisquick recipe. I was glad to hear that your shortcake worked out, since one reviewer I read said that theirs didn't turn out that great (actually they were talking about biscuits). They didn't really say why they didn't turn out, though, just that they didn't have a similar texture of biscuits. Anyway, I will look forward to reading your reviews and see what you make.

    wave.gif if folks are expecting the texture of regular Bisquick they will be disappointed. I served the shortcakes for a large gathering of family and friends and everyone enjoyed them. I haven't made biscuits with it as yet. Hope the recipe works well for you. That buckwheat bread is very good.

    There is a recipe for home made gluten free bisquick mix which seemingly is quite good: Gluten-Free Bisquick Mix #45611
    I've made my own bisquick mix based on that one with several substitutions and it worked quite well, so I guess the "original" has to be really good. Indeed I added xanthan gum which is not listed in that recipe. As I'm naturally lazy I've tried to use the mix for muffins, too, and it worked pretty well.

    Paula, how did I miss you were gluten free now, too? Do you feel better that way?

    Talk about denial. I really haven't said much because I really thought I had gone over the deep end. The more I read and more I learn the more frustrated I get with my doctors over the years. I have had some classic symptoms most of my life. After being gluten free for 6 weeks my symptoms are improving. I look forward to trying the Bisquick. The store package is very expensive.

    I can see what you mean, Paula. Don't ask me how many doctors suggested I see a shrink before I found out about that celiac icon_confused.gif
    If you're diabetic, too, that's quite typical, you know? Celiac and diabetes very often go together. One of the problems of being gluten free is that you always are in danger of taking in too many starches which is very bad for the insuline metabolism.

    Considering the bisquick mix recipe, I must say that most home made gluten free things are not only less expensive but also better than the store bought stuff.

    I'm not the diabetic in the family. That ailment belongs to DH. I have other problems for example hypothyroidism, Vitamin D deficiency, digestive issue, etc. My stomach was very boated. I do feel much better. I have more energy the hypoglycemic symptoms have all but disappeared and my memory has gotten much better.

    How much xanthan gum did you add to the Bisquick?

    Hypothyroidism and vit.D deficiency as well as hypoglycemic symptoms also are very common in people with celiac or gluten intolerance. So good that you feel better!

    Usually I use 1 teaspoon xanthan gum per cup of flour in most recipes.
