Menu for Week of May 25 through May 31, 2013

Howdy hey, menu peeps!!!! How is everyone doing?? We're doing fine here in my neck o' the woods!!
We have a spur of the moment trip to Arizona this weekend!! Stocking up on sunscreen - it'sa gonna be hot!!! But it also amounts to no cooking! So my menu is kinda bare this week. But here it is...share yours!!!
Saturday Sunday Monday - ARIZONA!!!
Tuesday - Wild Ranch Chicken Wraps using some leftover breaded chicken in freezer. With some kind of side ?
Wednesday - Avocado lemon pasta - I will make this, I will!!!
Thursday - Slow Cooker Chicken Mole - sounded so good I put it on this week's menu!!! With all the appropriate sides!
Friday - leftovers or out to eat!!

C - have a great trip, and travel safe. Sounds like a nice weekend. Nothing much here; maybe head to a friends on Mon ... but my ex usually shows, so ... awkward. May just lay low. A beach walk, A nice breakfast with a friend. Relaxing in the objective.
This past week ... I knew things would change, and they did. Back with my menu later tonight.

Can you believe it is already Memorial Day - Wow!
Nothing exciting for me. I may go to a BBQ Mon, but that is up in the air. Otherwise, I plan to smoke some chickens, enjoy the pool, go fishing, and lay low.

Local art event (open house late afternoon); probably have a bunch of appies - so, maybe soup or cheese and crackers for dinner. Maybe take it to the beach for a sunset walk.
SUN ...
Lady #4: Out of town
Me: Using a gift certificate for more sushi; probably make a salad too
HAPPY MEMORIAL DAY
- First, I am smoking 2 or 3 chickens for freezer stash regardless of what my plans are the rest of the day.
Two (2) options for Dinner:
1. friends BBQ - my ex always goes, so awkward. If I do - I'll take oysters to grill with my spicy butter sauce.
2. some of the chicken; zucchini tomato casserole; with potato salad
TUES ...
Snapper I caught last week, served with a pineapple salsa; scallion coconut rice; leftover zucchini from Mon
Also: making eggplant lasagna for the freezer; and roasting egg plant for the freezer stash. My eggplants have been harvested - 25 of them!
WED ...
Ladies #1 and #2: Open face steak sandwiches w/grilled onions, portabellos; and bernaise sauce over toasted baguettes; broccoli, cauliflower, and carrot salad; fresh tomato slices w/creamy balsamic
Me: Leftover smoked chicken ... Maybe as a sandwich or quesadilla, topped w/pineapple salsa, and cheese. Chips and homemade pickles.
THURS ...
Lady #3: Family in town
Me: Ravioli, a simple white wine and mushroom broth, may add some fresh spinach; stuffed roasted tomato halves.
FRI ...
Ladies #1 and #2: Game/Card Night - Eggplant parmesan, served w/spaghetti; Italian salad; garlic bread; fried calamari w/spicy remoulade.
Me: Movie or poker night

Breakfast: yogurt, cottage cheese, fruit
Lunch: leftovers or soup if any
And ... don't forget to clean out your fridge, freezer, and pantry, there is a meal waiting to be made!

Here I am actually posting on the weekend for a change! Charmie I hope it is fun in AZ! SC - it is great that you can do all that advance smoking. My BIL has a big green egg, and it occurs to me that I should just go over there with a whole bunch of meat someday and then stock the freezer.
Nothing complicated this week -- somehow there is just so little time these days!
Sat – pasta mixed with egg (as with carbonara) with leftover Two-Step Artichoke Tapenade
Sun – Slow Cooker Chicken Mole (leftover from Thurs) with tortillas and kale
Mon – cheeseburgers with chickpea fries (http://vegetablematter.blogspot.com/2010/02/panelle-chickpea-fries-with-dipping.html?m=1) and broccoli
Tue – Salmon Soup with oatmeal bread (freezer; King Arthur recipe)
Wed – tortilla roll-ups with spinach, chickpeas, goat cheese; veg from market if possible (farmers market at the park near our house on Tuesdays)
Thu – Shanghai Noodles, but with Asian noodles and extra veg (maybe snow peas), and I may add some frozen fish and toasted almonds
Fri – Arabic Green Beans With Beef with millet [will possibly add white beans to stretch it a bit]

Sounds tasty.
As long as I'm home ... I love the smoker. Easy to make, and great to make ahead. I will just cut in up; some in whole breasts, and leg quarters; others, I will dice up. Just bag and freeze. I like to put in small baggies; and then inside 1 gallon baggie. Just grab one, when I need it.
Perfect for salads, soups, casseroles, cream chicken, cajun dish with shrimp, pizza, sandwiches. Brisket is another great one to freeze. Great prepare ahead type of food.

Not sure what else we will be having but the chicken mole sounds great and we have everything to make it too.

I'm back!! Great menu guys!!!
We got back earlier than expected so I made some burrito bowls - brown rice, black beans, shredded chicken, cheese, sour cream, pan roasted corn, salsa. Sorta like Chipotle!

Hi everyone. Sorry I didn't get my menu posted last week but we ate well. I made a big pot of chili, as well as beef stew, some to eat and some for the freezer.
I also made SC's Pork tenderloin recipe and it was yummy. I was a little light on the seasoning as I was expecting more salt from the soup. I just adjusted the seasoning in the end and it was a nice meal. The rest will be turned into soup as you suggested. I just threw some stuff into the freezer bag with it and it should be good.
This week I haven't made a menu yet but know we will be having short ribs, chicken thighs and a big pot of soup for sure, not sure what kind yet. I plan to roast a chiken on the weekend unless we go out for dinner for my son's birthday. I think that will use up the meat I have in the freezer.
I am quite impressed with myself and the number of freezer meals I have stocked in the freezer. I will add a few more over the next week.

A short week cooking wise and other wise.
Tuesday: pizza
Wednesday: Grilled Chicken and Plantains, Jamaican-Style and salad
Thursday: Seasoned Sirloin Steak BBQ Sandwiches, fruit salad and ice cream sandwiches
Friday: Slow Cooker Chicken Mole and tortillas and all the trimmings
