    Newbie "Fry Cook" Poster
    I am so sorry if I am not in the right category for this question.. I do not use lard in my home and I just recently started working in the kitchen of a restaurant that uses lard to make their tortillas. They use 50 lb boxes and leave them totally unopened and exposed to everything all the time. How should lard be stored and what are the consequences if any. Thanks in advance.

    Lard will hold it's quality for something like a year if stored in a cook, dark place and for something like two years if stored in the frig.
