Here's an idea for a light, crispy summer entree (or appetizer): Recently we dined a a P F Chang Chinese restaurant and had their very popular lettuce wraps. This reminded me that I hadn't made my version for several years so I looked up my recipe and posted it. To keep it super crispy use only fresh green beans and, if available, substitute fresh jicama for the canned water chestnuts. You can find it as #430163 on RecipeZaar.

I don't have a particular recipe, I have so many of them
All those look great.
I love to serve lettuce wraps along side grilled fish, steak, chicken, pork, etc. I fill them with not only meat or cold salads, veggies, or even just a chopped salad or even asian type of salads or if an appetizer, maybe some seafood. Pretty much anything. They are wonderful for summer grilling and BBQ's. They travel well, easy to make ahead, healthy and light. I like making them vs a big salad.

Lynne Rosetto Kasper had a good one in her online newsletter this week; I don't know if it's on the Splendid Table web site or not. I LOVE summer rolls!
