    Gluten-Free Father's Day

    Breakfast in Bed is a time honored Father’s Day tradition in our house. It started when my oldest was just a babe in arms and I wanted to do something special for my husband on his first Father’s Day as a father. As the kids got older they took over and (with my help) started “surprising” my husband with a homemade and usually delicious breakfast tray served with lots of love.

    Things got significantly more complicated when we started a gluten-free diet. Since pancakes are our favorite breakfast we started experimenting with different gluten-free pancake recipes and after many trials here is the recipe that we came up with.
