Does anyone else out there have celiac disease AND have allergies to dairy, eggs, soy, citrus, nuts, and melons AND have to avoid sugars, pork, tomatoes, peppers, potatoes, and eggplant AND need to follow the pH balanced diet (careful food combining)? Has anyone read the Great Taste No Pain book about food combining? I am at my wit's end in trying to gain weight.

I haven't heard about the pH diet before, but just did some googling to read about it. One article suggested that it could help you lose weight while another mentioned to aid in problems of food digestion and intestinal disorders.
I'm suspecting that you are trying the diet due to damage done by Celiacs Disease and food intolerances.
Basically, looking at your list of foods that you must avoid and those that you likely have intolerances to.............I'm thinking that you would likely meet the pH principles purely through dietary restrictions.
The pH diet seems to recommend avoiding citrus and eating lots of fresh or cooked vegetables and salads. It also had room for dairy products.....that are 'no go' foods for you anyways.
I'm thinking that veges and salad foods are very filling with loads of dietary fibre. My guess is that you could eat more cooked veges than raw. Also I'm not sure about oils on your diet.....but you could look to including cold pressed oils into your cooking and salad dressings. Avocados also are naturally high cal too
Eating more protein seems to add bulk too......................like the bodybuilders will eat steamed or poached chicken and turkey
I'm not sure if any of the above will help you. It can take a long period of time to undo the damage done through diet of gluten once diagnosed as having Celiacs.

I see Julie came to answer you. I really wouldn`t know where to start with this diet.
But I do suggest a good Dietitian or Nutritionist.
Play with the recipe sifter to pick recipes.
I did a search
LOOK HERE
But I am sure you will still have to weed through it to see what will work for you. Good luck and Much health to you.

 Thanks to both of you who replied. My main problem at this point - in addition to the eating carefully to prevent pain - is attempting to gain weight. I am being followed by a doctor and have seen a nutritionist, but it continues to be a slippery slope. I can only eat meat/fish/chicken if it is not within about 2 hours of other foods (other than greens). I eat a lot of avocados and cold-pressed oils (olive, grape-seed, and flax), and tons of beans and rice, in addition to salads and vegetables. Most fruits are a problem, and cannot be combined with other foods. I am slowly collecting recipes that are safe - this site is wonderful.

And yes, I am trying to heal from both Leaky Gut Syndrome and celiac disease, and the associated problems.

I am so glad to hear that you have a doctor and nutritionist working with you. To be honest, when I heard all of your dietary restrictions, I was worried for you.
Do you feel the benefits of your strict diet?
My thinking is that when you start to feel better it is extra incentive to say strong and stick with it

DH, DD (toddler) and I are gluten, dairy, egg, soy, certain nuts, sugar, pork, peppers, and eggplant free. I would also love to be on a PH balanced diet. I am currently learning about proper food combining as well. I was always trying to gain weight too before avoiding those allergens and I could not for the life of me. Now I do gain a bit I think because I have become healthier upon avoiding the causes of my illness.

Our list of food intolerances was very like yours with the addition of all berries, and a couple of others. As our digestive systems healed, we've been able to add back all of the fruit, light use of tomatoes and peppers, eggs and all nuts. I don't think soy is a health food, so we avoid that still.
Hope you feel better soon. I'd retry in six months or so, that's how long it seemed to take for us to heal sufficiently to start adding stuff back. I'm following the Fit for Life diet plan and I feel great on it. It's based on how we digest, so it can't help but help, I wouldn't think

Eggplant is a nightshade, same as potatoes, tomatoes, peppers, paprika and tobacco. Common problem food. Everyone with arthritis should avoid them. Bella donna, a potent poison is a nightshade too.

Yes that is why. I once took belladonna as a homeopathic remedy!!! I had the worst reaction!
