    Sweet Rice Flour

    I just bought some and don't know what to do with it. Any ideas?

    A sample recipe

    Custard Mochi
    ½ c Butter
    1 ¾ c Sugar
    4 Eggs
    2 c Mochiko [sweet rice flour]
    3 tb Baking powder
    4 c Milk
    2 ts Vanilla
    Cream butter and sugar together. Beat in eggs, one at a time into a creamed mixture. Combine mochiko and baking powder and set aside. Add vanilla to milk in a bowl. Add mochiko mixture and vanilla milk into creamed mixture. Beat thoroughly. Bake in greased 9" x 13" baking dish at 350 for 1 hour and 10 minutes.

    Sweet rice flour can substitute tapioca starch [flour].

    So it can substitute a starch 1 for 1?

    Yes - a straight substitution: 1 for 1 ..

    An example of a GF flour blend:
    ½ cup sorghum flour
    ½ cup tapioca flour or sweet rice flour
    ½ cup potato starch
    ½ cup teff flour

    OR

    1 cup sorghum flour
    ½ cup potato starch or cornstarch
    ½ cup sweet rice flour or tapioca flour

    Interesting. Yes I understand that now as Gluten Free Dairy Free Muffins Mix have been enjoyed.

    I've also seen it used in some pastry recipes.

    Also the sweet rice flour is often referred to as glutinous rice flour here in Australia
