summer crockpot recipes needed

We've been eating soups, stews, beef roast, chili etc all winter. And now I've realized I don't know any summery recipes to toss in my slow cooker.
If you guys have some, that would be great.
We're planning a huge house project weekend, and there's no way I'll have time and energy to cook in the evening.

Our garden's not producing the summer squash and tomatoes yet, but we'll be sure to try the sloppy joes, fajitas, philly cheese steak sandwiches, and more. And eat some garden spinach and lettuce as a side salad.

I'm thinking about this topic too. I do see that the slow cooker doesn't heat up the kitchen as much as the stove does,, but cooking is cooking and the food is hot. I did my first roast in a slow cooker today,, so the chicken and potatoes were hot, but I wanted a something else for the veggie.. corn on the cob would be good when that comes in. Coleslaw. The good thing about a roast is that the leftovers are in the fridge and can be eaten cold tomorrow. cold chicken salad, or chicken sandwiches. Roast beef too. I'm going to put a good size of beef in, and enough potatoes for one meal, and then refrigerate it for a cold plate the next day.

Aren't potatoes wonderful baked in a slow cooker? and sweet potatoes too! Great texture - better than baked in the oven cuz they don't dry out, and better than in the microwave too!
And I roasted a chicken breast with potatoes and corn, and that was great too! Next I'm going to roast some kind of beef.
I don't like casseroles so I never got a slow cooker, and I never realized that the wattage is so low!
Well, in fact, I still wouldn't have gotten one but I saw a small one on sale at such a good price I couldn't resist. And I just got a 3 quart one too.
