    Old Fashioned Cherry Ice Cream Soda

    My Mother wants the recipe for an Old Fashioned Cherry Ice Cream Soda like she said she got when she was a little girl from drug stores. I look forward to your help!!! Thanks!

    Sorry I can't really help. But my mother in 1943 was a soda jerk at The Girl In Red Restaurant. I remember going to the same restaurant when I was 11 or 12 years old, can picture the sign out front the name and a Lady with a red dress and long blonde hair, if we saw that sign nowadays well you know what comes to mind..certainly not Betty Boop.

    Any ways the sodas she made were one ounce marachino cherry syrup, they had a special size dipper, then two scoops vanilla ice cream and topped it up with carbonated water. So where you would get the proper syrup your mom remembers would be the trick.

    When we went there we ordered cherry cokes which were one ounce cherry syrup and topped up with cola. Or a chocolate coke . Those were the days.

    Here is one place you can buy soda-fountain syrup online: Prairie Moon

    You may also be able to find it at stores that sell homebrewing supplies (many homebrewers also make their own soda pop), but that's less likely.

    Here's the basic soda recipe:

    Old Fashioned Soda Fountain Soda
    This is the basic recipe. You can use any syrup flavor.
    Ingredients

    * 3 ounces syrup, your choice of flavor
    * Seltzer or club soda
    * 1 to 2 scoops vanilla ice cream

    Directions
    Pour syrup into a tall glass. Fill half full with seltzer or club soda. Stir vigorously with a long spoon. Add ice cream. The ice cream will react with the carbonation and the foaming will start. If there is any room left in the glass, fill to top with more seltzer.

    Try starting with Vanilla Syrup, but use cherry extract instead of vanilla.
    Then add ice cream and soda. May be a start for you.

    Cherry Vanilla Ice Cream Soda

    Making your own cherry syrup is the secret behind this soda fountain classic. If good fresh cherries aren't available, use an equivalent amount of canned sweet cherries in syrup.


    2 cups pitted fresh cherries or drained canned sweet cherries (see Note)
    1/2 cup sugar
    1 cup cold whole milk
    1/2 gallon vanilla ice cream
    1/2 gallon cherry or cherry-vanilla ice cream
    One 1-liter bottle cold cream soda

    Sweetened whipped cream
    4 whole cherries

    Chill four 11-ounce soda fountain glasses or other tall glasses in freezer.

    Puree cherries and sugar in processor until smooth. Transfer puree to heavy small saucepan; bring to boil over medium heat. Reduce heat to low and simmer, stirring occasionally, for 3 minutes. Place fine mesh strainer over large glass measuring cup or small bowl. Strain puree, pressing on solids with back of spoon to extract 1 cup syrup. Cool.


    DO-AHEAD TIP:
    Cherry syrup can be made 3 days ahead. Cover and refrigerate.

    Spoon cooled cherry syrup into bottom of chilled glasses, dividing equally. Pour 1/4 cup milk into each glass; stir to blend. Add one scoop vanilla ice cream, then one scoop cherry ice cream to each glass. Repeat layering ice creams. Fill glasses with soda. Top with whipped cream and whole cherries. Serve immediately with straws and long soda fountain spoons.

    NOTE:
    If using canned cherries, reduce juice from can to 3 tablespoons. Add reduced juice to cherry and sugar puree, and proceed with simmering and straining.
