We don't have La Victoria enchilada sauce where I live, but we have Old El Paso. I think the key word is 'enchilada sauce' to get as close to it as we can.

i'm making Pollo Con Salsa Verde (Chicken With Green Sauce) for dinner tonite..a yummy dish thats quick & easy with great flavor. i roasted some pasilla peppers yesterday for Josephinas Numero Dos and have some extra that i'll use...the new mexico green chiles i normally use are really yellow this season for some reason. just thought i'd share!

Sorry to go back to my obsession with NM Green Chile Cheeseburgers, but I just found some Manchego cheese and going to make some homemade burgers this weekend. Anyone ever tried them with the Manchego?

I feel a trip to NM coming on. I'm in CO, so only about 3-4 hours.
If you want Hatch products (there are a lot of them, all good), have your grocer order them. They are in Deming, NM. You can google for the exact addresss.

i made green chili cheese burgers last night (omg fantastic) and told my bf to pick up a couple chilis to roast for the burgers but if he wanted me to make more to freeze feel free...well did i put my foot in it or what cuz he came home with 25 chilis!!  i didnt mind too much since i'm a chili roasting pro from way back.
for tonite i decided to make green chili chicken enchiladas tonite using New Mexico Style Green Chili-Sour Cream Enchiladas as a basis...since i've never made, only ate, new mexican green chili enchiladas i thought i'd see if you guys would tell me if this is a good authentic new mexican recipe...was planning on boiling the chicken in seasoned water, doubling the cream of chicken and leaving out the cream of mushroom and the salsa since i've never heard of putting in it..does this sound right??

I looked at the recipe you're making, and to tell you the truth, I've never used cream of anything in my enchiladas. But that's my tastes! Not to stir you away, but you are welcomed to look at my recipe Green Chile Chicken Enchiladas ... It's our favorite. Maybe someone else here can tell you if they've used the soup

Let's get this thread bumped up!
Just came back from Santa Fe. Went to Tecalote, La Choza, and Bert's burger bowl (green chile burger), Pasquals for brunch. A total New Mexican pig out. I do love the food there. This year is the 400th Anniversary of Santa Fe.
I think I will have to go back again before year end.

Is the Bull Ring still in operation? I spent 22 years in SE New Mexico but got around a lot! Family just sent a CARE package of Long Green Chiles! Made Chiles Rellenos tonight! (Sigh) What an opportune time to find this thread!

Just bought a 1/2 bushel of roasted hatch (pueblo) chile at pueblo chile and friljole festival. Frozen and in the freezer. Had sloppers and all kinds of chile. I'm going to try to can some chile verde this week. Wish me luck.
