    what to do with left over yam?

    I like yams, but they are so flipp'in big, i always have lots of left overs and i never know what to do with them.
    Any ideas?

    (Yams are the big fat reddish ones and the sweet potatoes are the skinnier yellow root-like potatoes right??)

    When I have leftover yams/sweet potatoes, I often slice them into thick slices (1-1/2-2") and put in quart zip lock bag to be used for a quick dish later. I often bake sweet potatoes just so I'll have them for the freezer when I need them.

    Spicy Yams: Place cooked sliced yams in casserole, sprinkle with a little chili powder and a little cayenne and brown sugar (or honey). Heat uncovred until sugar and yams are hot.

    Use frozen, thawed yams to make Sweet Potato Souffle - if you do a search, I'm sure you'll find lots of recipes choices.

    Make a sweet potato pie. Search...same as above.

    When I have yams I just slice them in sections (across) and boil them. I just serve them with butter and salt and pepper. Sometimes I will buy that marshmallow cream and let guests put a scoop on their own. They are great! With leftovers I just reheat in the micro for a few minutes...It's too bad that yams aren't more widely used. I think it's because the canned yams are more familiar and also too, people always cook them with a heavy sweet sauce...yuck! Try them boiled they really are good

    Actually, unless you live in a Latin American country, you've probably never had a genuine yam. Even the canned ones labeled yams are not actually yams, they're sweet potatoes grown in Louisiana (which are called yams). True yams are huge, several pounds each, much bigger than the sweet potatoes in stores here. True yams are also tan in color and quite fibrous.

    Sweet potatoes come in many different colors and varieties.

    For leftovers, I'd just reheat and eat. icon_biggrin.gif They're great cooked with apples and onions, or tossed with garlic, chopped fresh thyme, and chile flakes, and roasted.

    We make this recipe at Thanksgiving....Yams or Sweet Potatoes with Pineapple and Nuts and there usually isn't much left. The sweetness all comes from the pineapple. There are no added marshmallows or brown sugar.

    We fry sweet potatoes in the South. You peel the sweet potato then slice it thin. Heat up an iron skillet, add just a little oil and place the sweet potatoes in the skillet. I cover the skillet and cook the potatoes no higher than medium heat. Turn them when they start cooking. Cook them until they are tender and slightly browned. To serve them, sprinkle them with a little sugar and butter. They are especially good with pork and chicken dishes.

    You can mash them for inclusion in soups (African or Caribbean), spice cakes, pies, and bread. I suspect that you may be able to substitute them in almost any recipe calling for pumpkin.
