    ZWT #9 - All Players Cookbook - Cajun/Creole


    The Holy Trinity is the name given to the vegetable mixture common in Creole and Cajun cuisines. The blend consists of three ingredients: chopped onions, bell pepper, and celery. The trinity forms the flavor base for many Creole and Cajun dishes, including gumbo, etouffee, jambalaya, sauces and stews. The trinity term came into use around 1981 when the popular chef Paul Prudhomme used the term and possibly coined it.

    In Cajun/Creole Country, cooks don’t say, “Add onion, bell pepper and celery” to a recipe. They simply say, “Add a cup of the trinity.” A typical trinity includes 2 cups chopped onion, 2 cups chopped celery, and 1 cup chopped bell pepper.

    The trinity is prepared by sauteing the chopped vegetables together in oil or butter to release their flavors. The aroma alone is enough to entice even the pickiest eater. Once sauteed, the cook adds the appropriate herbs, spices, broths, liquid and/or roux to begin preparing the dish. The flavor from the Holy Trinity brings a unique taste to the overall dish.
