If you are just now thinking about joining the trend to can food this summer, start by checking your equipment and supplies. Proper equipment in good condition is required for safe, high quality home canned food. Planning ahead can save you time, money, and frustration with home canning. Make it a happy, successful canning season by getting prepared before your harvest is ready.
Making Soft Cheese at Home
Most likely the first "preserved milk" happened by accident. What they got was cheese, or more simply put-cheese curd swimming in whey.
And they liked it! Ready to get started? The Canning Forum will cover making homemade: ricotta, mascarpone, paneer, yogurt cheese, boursin, cream cheese & creme frache.

Caribbean ~ Shrimp
Shrimp metamorphosize 3 times from birth to adulthood. Start as nauplii, zoeae, myses, postlarvae. The whole process takes about 12 days from hatching. To end up with 1 pound of cooked shrimp you need to buy between 2 and 2 1/2 pounds of raw, unpeeled, or "green", shrimp. Save the shells if you peel them before cooking-they make amazing stock.
Have any shrimp recipes you would like to share?
Sapodilla or Sapote is a tropical fruit rich in vitamins, minerals and health benefiting anti-oxidant tannins. The fruit is soft, composed of easily digestible pulp made up with simple sugars like fructose and sucrose.
Common in Central Mexico and South America, the white sapote is successful wherever oranges can be grown. In California mature trees are found from Chico southward. It does poorly in areas with high summer heat such as the deserts of the Southwest, and in the high humidity of the tropical lowlands of Hawaii and Florida. Given that it is hard to find "out of the region it is grown in" as it's a tender fruit that does not travel well.
Jam/Jelly of the Month ~Strawberries
On the average, there are 200 tiny seeds on the outside of every strawberry. If all the strawberries produced in California this year were laid berry to berry, they'd wrap around the world 15 times. That's enough strawberries to provide every U.S. household with 12 pint baskets. California is the only state in the Union that grows strawberries outdoor all year round. One year’s supply of California strawberries weighs one billion pounds. Read more about strawberries and share your favourite canning recipes.
