    This is one of my favorite soups! Knoephla Soup
    It is loved by every North Dakotan I have ever met. I am always asked "Have you had our Knoephla Soup yet?"

    Wish I had a bowl of Knoephla soup now! It sounds perfect for a chilly day like we have had and it is only going to get colder next week. Thank you Jelly!! icon_smile.gif

    When I can dig it out, I'll post Cheeseburger Ole soup, and Hot Tangy Tomato Soup. Chicken tortilla soup II, "Chicken Tortilla Soup II" is so good.

    Cheeseburger Ole
    1# lean gr. beef
    1/4 c chopped onion
    1 minced garlic clove
    1 T butter
    1 can (16 oz) pinto beans, rinsed and drained
    1 can (16 oz) white corn
    1 can (16 oz) crushed tomatoes
    1/2 c tomato sauce
    1/2 c picante sauce
    1/4 t cumin
    1/2 # velveeta cheese, cubed

    brown beef, drain. Melt butter, add onion and garlic, saute about 5 min. Add the rest except cheese. simmer 1 hour. Add cheese and heat and stir until melted. Serve with sour cream, gr onions, bl. olives, cilantro, gr. onion, chips, tortillas or bread.

    This recipe lends itself to all kinds of inspiration. Have fun.

    The soups are posted. The Chicken Tortilla Soup II is a Zaar recipe. The tomato soup and cheeseburger soup are waiting to be posted. I just finished adding them.

    Enjoy. Everyone I serve them to love them and ask for the recipe.

    Feel free to change, alter, add ingredients. I don't think you can make a mistake.
