    The squash soup would be a bit to spicy for us but savinng the taco soup....love Paula Deen!

    I just made this one a few days ago and we're just finishing off the leftovers- Slow Cooker Potato Soup With a Zip
    I highly recommend this great crock pot soup. It's easy to put together, tasty and filling.

    I have been on a kick for homemade soups and there are two that we just love, Butternut Squash Soup and Cauliflower Soup (which I cannot recall where I got it from will check when I get home currently at work)

    This could be adjusted for a slow cooker I would cook on low for 4 hours
    Butternut Squash Soup
    Prep Time: 10 min
    Inactive Prep Time: 0 min
    Cook Time: 40 min
    Level: 0

    1 butternut squash, peeled ( I used half of a large one)
    Nutmeg (I did not use as several of the reviews said not to)
    2 tablespoons unsalted butter
    Salt and pepper (used pepper only)
    1 onion, chopped (soften in frying pan prior to adding to slow cooker)
    6 cups chicken stock ( I used one box of Vegetable Stock) several reviews said 6 cups was too much I used the whole box not sure of the size sorry icon_sad.gif
    1 Large chopped Carrot (I added the carrot not called for in the original recipe)

    Cut squash into 1-inch chunks. In large pot melt butter. Add onion and cook until translucent, about 8 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender. Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot. Stir and season with nutmeg, salt, and pepper. Serve.

    I am going to break down and share my Green Chili Stew with y'all! As soon as I make it again and write down the instructions. I wing it cuz I make it frequently during the winter months due to all the Vitamin C it packs!!!
