Cooked pasta, either mixed with spaghetti sauce or plain?
Cooked bread, biscuits, waffles, pancakes?

I find that cooked pasta does not freeze well (other than lasagna or stuffed shells, but I don't know how well the gluten=free varieties freeze).
Baked goods generally freeze well, use within a month.
Unbaked biscuits also generally freeze ok, again use within a month.

I like to place a piece of baking paper between slices of bread, pancakes and waffles as it stops them from sticking together. Gf baked goods seem to freeze well.
I generally cook pasta as I need it and gluten-free pasta can be more fragile than ''regular' wheat pasta.
Cookies freeze fine, stored in an airtight container or ziploc bag.
