    Making meatloaf - no egg available- any suggestions?

    I was going to make meatloaf tonight, but just realized I don't have any eggs. Does anyone have a suggestion for a substitue, or a recipe that doesn't call for egg.

    I you have flax, grind about 1/2 cup per pound of meat and it will bind like the egg would. 1/2 cup of bbq sauce and a couple tablespoons of brown sugar will moisturize.

    The egg is there for 2 reasons; moisture and binding. One egg is the equivalent of 1/4 cup. I would add a mixture of the following to equal 1/4.

    rice and milk (cooked rice)
    oats and milk
    bbq sauce and flour
    ketchup and flour
    cereal and milk

    How weird, I am having this same issue tonight!! So, I was thinking use ketchup and flour, as you mentioned, but in what ratio?

    1/8 c. ketchup plus 1/8 c. flour?

    Yes. but make sure when using flour that you mix it very well into the liquid before adding to the meatloaf.

    I have never added egg to my meatloaf or burgers!
    I have had no trouble with them falling apart... icon_eek.gif

    I made mine before the eggless recipes were posted, so I will check those out for next time - thank you!

    I used the ketchup plus flour, stirred well, then mixed into the loaf, and it worked just fine for me.

    You don't have to use eggs. I use 500gm beef mince, and 500gm sausage meat. The sausage meat binds it all together. I always add diced garlic, 2 courgettes and 1 lge carrot, grated. Also you can add some 45gm onion soup mix

    Getting ground beef to taste good generally needs so fats and flavours. Try adding 1/4-1/2 cup of sour cream to fet the fats. For some nice taste and texture, add a half cup of oatmeal (your binder)
    Flavour with garlic, chopped onion, BBQ sauce, grated cheese, maple syrup (no more than 1/4 cup!), mustard, "to taste"...have some fun!

    About a half cup oatmeal allowed to thicken-up in a little milk works for me. I put the oats and milk in the microwave and nuke for about 15 secs to get the milk warm.
    Plus oatmeal makes the meatloaf tender, but not fall apartness (is that a word?). icon_redface.gif

    That's what neighbors are for! LOL Our next door neighbors and I swear that we use each other as a rotating pantry sometimes. Comes in handy when the grocery store is 20 miles away, one way!

    I always use an egg, but I admit I have made it without. My meatloaf is very moist. I use fresh bread soaked in milk, also ketchup, grated onion, grated carrot, lots of fresh herbs,worcestershire and never had a problem and have used this without egg and works fine. But there are hundreds of recipes out there.

    If I really wanted an egg ... a neighbor. If not, I would just not worry.
