    Best GF Pasta for Pasta salad?

    I'm making my grandmother's chicken macaroni salad recipe and will be serving to a friend that needs to eat GF. It's a creamy cold salad and just need advice on which type of GF pasta works the best for a salad like this. I would like to make it in the morning and it will sit in the fridge a few hours before my luncheon. Thanks for any advice or input.

    I like to use gluten-free pastas that are not just rice noodles, as they seem to have more body.

    Always with gluten-free pasta - add the pasta to rapidly boiling water and stir it in (otherwise the pasta can all seem to stick together).

    Gluten-free pasta tends to go from cooked to overcooked in about 30 seconds. Also gf pasta seems a little more fragile than regular wheat based pastas. For this reason, I would slightly undercook the pasta, as you want it to hold its shape for presentation of your salad.

    I don't eat GF, but I love brown rice pasta, it keeps a nice tooth.
