    Hi menu friends. Sorry I'm a little late. Sometimes Fridays just get away from me!! We're back into hot hot weather. Sigh, so much for fall.
    My first cooking class went really well. They over booked it so we were packed! This coming week is side dishes for the Holidays, so I'm teaching on twice baked potatoes and showing a bunch of ways to change that up. Then bacon wrapped green beans, and some fantastic cooked carrots. Also tricks and tips on mashed potatoes and other sides.

    Anywho...here is this week's menu. Share yours!


    Saturday - going to a friend's house for dinner. I'm asked to bring a salad, so whatever looks good at the store!

    Sunday - bringing breakfast to youth leaders at church, so making pan fried potato and egg burritos, with some locally bought Mexican pastries. For dinner, Garlicky Chicken or Pork Souvlaki, Tzatziki Cucumber Dipping Sauce, Lemony Couscous With Mint, Dill and Feta

    Monday - Tarragon Cream Chicken, Carrots (Old Family Recipe) (the one I'm using for cooking class), rice pilaf

    Tuesday - Beef pot pie using leftover smoked tri tip, salad

    Wednesday - Thai Beef Pitas, Big Daddy's Lemon Pepper Orzo, and I need to decide upon a dessert to take to our new Bible study icon_rolleyes.gif

    Thursday - Cooking class #2, I might just get pizza for the family.

    Friday - out to eat!

    C - glad your class went well. Sounds like a great plan for this next class.

    Back in a bit ... I was late as well, work related issues and company. Most of it is done, but just finishing up a few last minute changes.

    Very strange last week, things got all screwed up and this week may be just as bad with odd work hours and things going on. We will try to make the best of it.
    Hope everyone else is enjoying Fall, hopefully the end of this week will be a bit cooler. Halloween is right around the corner. Anyone have Halloween plans.

    SAT ... Halloween Party next weekend, so tonight we are finalizing our menu.
    Dinner: Tonight, us 6 cooks are each taking something over to our friends house who is hosting the party.
    She is making french dip sandwiches, me classic onion soup, one guy has potato salad, another, his famous bacon wrapped smoked shrimp with a spicy dipping sauce.

    This is what we are finalizing for our Halloween party
    - orange jello shots with a creamy white liquor and a black topping
    - Blackened fish bites with and spicy orange tomato dip (skewered)
    - Squid Ink pasta with a creamy white cheese sauce and butternut squash (small cups)
    - Small pumpernickel sandwich bites with roasted orange bell peppers, goat cheese and arugula
    - Gingered carrot soup
    - Pumpkin pasta made into ravioli stuffed with cheese, fried and served with a sweet/spicy cranberry dipping sauce
    - Stuffed fried olives with an orange cream cheese
    - Papaya and mango salad with a with mint
    - tuna bites crusted with black sesame seeds
    - eggplant caviar with pita chips
    - green salad with tomatoes and a black creamy dressing

    SUN ...
    No Soup, have enough / Bread Day: Sourdough in the bread maker
    Dinner: Mexican Chicken Hash With Poached Eggs; tomato slices

    MON ...
    Lady #1 and #2: Sarasota's Greek Chicken Stew; spinach salad with cucumber, tomato, and an Greek olive oil lemon dressing
    Me: My Greek wraps I haven't made for 2 weeks. A lamb patty in the freezer grilled and cut up in a wrap with olives, artichokes, lettuce, onion, feta and a greek dressing; cup of soup

    TUES ...
    A late birthday lunch at a friends house. Insisted that I bring nothing. But I'll take wine and some kind of treat for her later in the week

    Lady #1 and Lady #2: Neighborhood function, so I am off the hook
    Me: My new chicken ravioli with walnuts and dried cranberries. White wine sauce with cream and fresh sage; greens with a celery vinaigrette

    THURS ...
    Lady #3: She wants to invite a friend but she has some dietary restrictions, so I will find out later this week. Thinking pork wellingtons; gruyere mashed potatoes, a balsamic dressing and roasted baby carrots
    Me: Tilapia foil pouches with spinach, tomatoes, onions, mushrooms and white wine on the grill; couscous or orzo with parsley, lemon

    Ladies #1 and #2: TBD, card night
    Me: Cooking for our Halloween Party. Friends coming over to help. It is supposed to be only 70, so comfort food. Two big pans of mac and cheese with chicken, bacon and broccoli topped with tomato slices. Nothing more is needed.

    Saturday: Pumpkin Turkey Chili (Crockpot)
    Sunday: Lasagna (Ww)
    Monday:maybe out -- it's my sons birthday -- or Mom's Vegetarian Cabbage Rolls -- one of them love cabbage rolls and we can always pretend it's real hamburg!
    Tuesday: Stitching night -- frozen pizza for the family!
    Wednesday: Garlic Roast Beef Sandwiches w/Zesty Confetti Slaw
    Thursday: leftovers or Zucchini and Tuna Pappardelle
    Friday: fish and salad

    Already saved some good recipes this week - thanks!

    Sunday: Sarasota's Savory Roasted Chicken, Apples & Onions, Ellinikos Lemoni Patatas (Greek Lemon Potatoes), and caramelized butternut squash. Fresh pumpkin pie for dessert!

    Monday: My version of Ham and Sharp Cheddar Biscuits, jello, ants on a log, and carrot sticks.

    Tuesday: Soup night! I think it's going to be a blend of 2 recipes - Uncle Bill's Vegetarian Minestrone Soup and Pasta E Fagioli (Italian soup) with Italian Sausage. Nice loaf of bread to go with.

    Wednesday: Leftover night

    Thursday: Breakfast casserole, juice, banana bread

    Friday: Meatballs with mushroom gravy, mashed 'taters, and green beans.

    Saturday: Japanese Mum's Chicken, pierogies, a veggie to be determined.

    Hi there,

    I'm back after computer problems - virus and then DSL stopped working - but back in business now.

    SC - your Halloween party prep food looks so interesting and yummy!

    We have more cousins from Switzerland (the exchange rate is very favorable right now). It's great for us to see them but the planning is all over the place so I am just having options on hand since I'll never know if we're cooking for 3 or 8 or 6 or what.

    Sat - Would have done chickpeas/olives/fish over couscous, but there was postgame tailgating as well so I was by myself and had poached eggs in soup with cheese and toast. I also made an enormous pot of spaghetti sauce for the freezer.

    Sun - Probably Saturday's plan; or just sandwiches if we eat a lot at the folk music festival we are heading out for soon.

    Mon - dinner with all cousins at inlaws

    Tue - Chicken With Olives (which is done; just simmering on the stove now) with egg noodles

    Wed - UVA president's dinner (for international students and hosts)

    Thu - spaghetti? burgers? (both options are at the ready in the freezer); burgers would be with some veg and maybe potatoes (would have to do on the grill since I still have no oven function)

    Fri - Sarasota's Sesame Grilled Chicken Thighs with Brussels sprouts and brown rice

    Oh, SC, your Sarasota's Savory Roasted Chicken, Apples & Onions was out of this world!! The whole family loved it (minus the picky 10 year old who has just come around to spaghetti icon_rolleyes.gif ).

    I ended up skipping the lemon potatoes (too many flavors going on, and too little time) and served with oven roasted potatoes (olive oil and s&p) and caramelized butternut squash. Simply Fantastic!

    This will for sure become a standard on our fall/winter menu. Thanks so much for sharing it!!

    Crazy weekend - between sports / church / kids and work.

    Saturday - stuffed haddock. We have a great fish store (we are in New England - near the coast ) that has a yummy case of preprepped ... oven ready fish dishes. So this week - Lobster stuffed haddcok and stuffies.

    Sun - my homemade chicken pot pie - this is awesome, but I don't measure it out .. so I've never posted it.

    Mon - Roasted Root Vegetable Soup - from Mark Buttmans food matters cookbook. I made it yesterday and it was awesome.

    Tue - Husbands birthday - out to eat

    Wednesday - Semi vegetarian stuffed peppers. I use ground turkey and only a little bit. Lots of veggies and bulgar wheat instead of rice.

    Thursday - Ham steak for the kids. Clean out freezer / fridge for DH and I ( chef salads or those single serve leftovers )

    Friday - pizza night.
