    EQUIVALENTS, MEASUREMENTS & INGREDIENTS for North African & Middle Eastern Recipes:

    From time to time we come across recipes which have measurements such as 1 tea glass, 1 coffee cup, a 'nut' a 'pinch', a 'fist' full etc. This thread is intended to collate all these various measurements so that we can have something to refer to immediately.


    NA*ME SPECIFIC MEASUREMENTS

    In the 'not so new' recipe books you may come across any of the following:

    There is also some discrepancy between the names of various kinds of cream, here is a quick chart which should help:

    These conversion charts are fantastic, thank you so much for posting them.

    I was just wondering if anyone could help me with some measurements. I have a couple of books which are written in french I'm fine at translating but I just don't know the quantities-

    How much is one 'verre' and one 'mesure' ?

    surely the size of the glass used makes a difference in comparison to the other ingredients?

    Any ideas anyone?

    Hi Emma,

    I have plenty of those recipe books - they also tend to omit the cooking temps & times too don't they! icon_rolleyes.gif

    When a recipe calls for a 'verre' I usually use my water glass which holds 260ml. When asked for a 'measure' I use my large glass which holds 6oz dry / 310ml wet. As long as you use the same method for all the measurements, you should be fine....I've never messed a recipe up using that principle.
