    Enchilada Chicken

    The other night I had about 1/3 cup of leftover red enchilada sauce and was pondering what I should do with it. I also had 4 chicken legs in the refrigerator. The perfect solution.....I poured the leftover sauce over the chiken, allowed it to marinade for several hours and then baked the chicken legs at 350 for about 45 minutes. The end result was not spicy but well flavored, moist chicken.
