    I assume you will have rice of some sort, but need a veggie - I think this would be very good, Baby Bok Choy with Oyster Sauce . I particularly like baby bok choy, but regular works well, too.

    That sounds really good!! Unfortunately, I live in a rural area-and I doubt the people here know what bok choy is!! icon_smile.gif
    I really miss my good produce markets in the city.
    You gave me an idea though, I have some Schwann's frozen stir fry veg in the freezer. Thinking about doing long grain wild rice.

    You've probably already decided, but these are very good if you haven't. I also think asparagus or broccoli would be good with the chicken.

    Going to have to try both of those rice dishes! They both sound great. here is the recipe I am using.


    Chinese Bourbon Chicken Recipe


    This is a chinese version of a classic southern dish. You will be amazed at how tasty this Chinese Bourbon chicken recipe is.

    2 pound(s) , Boneless Chicken Breasts Cut Into Bite Sized Pieces
    2 tablespoon(s) , Peanut Oil
    1 large , Garlic CLove Crushed
    1/2 teaspoon(s) , Fresh Ginger Minced
    3/4 teaspoon(s) , Crushed Red Pepper Flakes
    1/4 cup(s) , Apple Juice
    1/3 cup(s) , Light Brown Sugar
    2 tablespoon(s) , Ketchup
    1 tablespoon(s) , Cider Vinegar
    1/2 cup(s) , Water
    1/3 cup(s) , Soy Sauce
    1/4 cup(s) , Bourbon

    Mix all ingredients. Marinate overnight.

    Bake @ 350 for 1 hour.

    I like to steam broccoli florets and baby carrots in a small amount of water in a covered skillet until just starting to get tender (just takes a few minutes), drain the water, and finish them by sauteeing in the skillet in butter with freshly grated gingerroot and a bit of orange juice. It goes well with a wide variety of foods, Asian and otherwise.

    I am fixing Bourbon chicken for dinner tonight. I am going to fix either a baked sweet potato with cinnamon, brown sugar and honey butter or glazed yams. I am going to fix oriental vegetables to go with that.
