I would make a toasted roast beef, cheese and horseradish spread sandwich and let him dunk it in the soup.

Oh SWalker..........I love that idea of potato skins with the soup......what goes better with beef than potatoes? I will remember this when I make onion soup the next time. Donna

My favorite restaurant back in Michigan years ago, always served a great roast beef sandwich on a soft (almost kimmelwick type of roll), soft round roll, heated, but not grilled. It had a simple light mayo, horseradish and garlic sauce nothing more.I was cut in half so you could dip it. It was the best simple sandwich. Warm slices of thin roast beef simmered in a broth just to warm on a warm bun. Not too hot, just slightly warm. It was the best.

When I make french onion soup I use 1/2 chicken & 1/2 beef broth. Most recently I also added vegetable stock and that was the best combination, so far.

I have a "meat and potatoes" guy too. So, I am serving him Veggie burgers and roasted potatoes with garlic, rosemary, and olive oil.
