Helpful Tips before you begin: 1. It reminds me what I have in the freezer. 2. I know what to pull out to defrost the night before 3. It prevents me from eating out because I know I have something on the menu at home. Alternatively, you could keep a running list on your fridge/freezer and check off items as you use them. Chicken Little – OAMC Mini Plan Menu Plan by JillAZ A “mini” cooking day is a great way to easily stock your freezer without a full day commitment. This is a good way to “try out” once a month cooking and see if it might be for you. I find that when our schedule is really hectic, this is a way for me to still make and serve my family delicious, homemade meals. It’s also a great way to take advantage of a great sale at the market! I’ve started with boneless, skinless chicken breasts as this is what is on sale this week in my area and is what my family enjoys. Of course, substitute whatever kind of chicken your family prefers! Let’s get started! Instructions: The Recipes: Crockpot Chicken Taco Meat- make a triple batch of this Chicken Enchilada Casserole Pineapple "dump" Chicken BBQ Chicken Calzones Sweet Salsa Dump Chicken - OAMC Chicken and Broccoli Pasta With Pesto I have included 5 meals plus, if you triple the taco meat, you will have some extra to freeze on its own. Containers needed: 3 gallon sized Zipper freezer bags 2 sheets of foil to wrap calzones 9 x 13 pan 1 quart sized zipper freezer bag Lg. rigid freezer container or 1 more gallon sized bag for pasta Plastic wrap Kitchen tools needed: Crockpot – if you don’t have this you could always roast the chicken until tender and then shred. Large pasta pot Colander Large skillet Large baking sheet Large saucepan Food processor – helpful but not necessary Task List: Remember – do this the night before! I like to hang my recipes on the fronts of my cabinets for easy reference when cooking. Place all ingredients in labeled zipper type bags and place in fridge overnight. Makes for easy assembly the next day! Cooking Day: Shred crock-pot chicken taco meat. Reserve 1/3 for Chicken Enchilada Casserole and 1/3 for BBQ Chicken Calzones. Package the remaining 1/3 in a quart sized zipper bag. Seal, label and place the final 1/3 in fridge to chill. When cool, freeze. Preheat oven and assemble BBQ Chicken Calzones using 1/3 of the chicken taco meat. Bake and allow to cool. Once cool, wrap in foil and place inside a large zipper bag. Seal, label and freeze. Assemble Chicken Enchilada Casserole using 1/3 of the crock-pot chicken taco meat. Cover dish well with plastic wrap and then foil. Label and freeze. Assemble Chicken and Broccoli Pasta With Pesto. Freeze in a rigid freezer container or a large zipper bag. Seal, label and freeze. Assemble Sweet Salsa Dump Chicken - OAMC, placing in a zipper bag. Seal, label and freeze. Assemble Pineapple "dump" Chicken, placing in a zipper bag. Seal, label and freeze. Labels: I like to use the bigger 2” x 4” labels. Avery makes them and calls them shipping labels. I used comic sans 12 pt font. BBQ Chicken Calzones Date: Thaw in fridge. Reheat in 400 degree oven until warmed through. Chicken Enchilada Casserole Date: Thaw in fridge. Let sit at room temperature for about 20 minutes before placing in oven. Bake at 350 degrees for 20 minutes or until bubbly and hot. Crockpot Chicken Taco Meat Date: Thaw in fridge. Use in any recipe calling for cooked chicken. Or, use for tacos, burritos, taco salad, etc. Chicken and Broccoli Pasta With Pesto Date: Thaw in fridge or microwave. Bake in a 9 x 13 pan or casserole dish at 350 for 30-35 minutes until heated through. Sprinkle with extra parmesan if desired. Sweet Salsa Dump Chicken - OAMC Date: Thaw in fridge. Dump thawed chicken into a large baking dish and bake at 350 degrees until juices run clear. 45-60 minutes for pieces or 20-30 minutes for breasts. Pineapple "dump" Chicken Date: Thaw in fridge. I wanted to post my OAMC plan that I did over this last weekend. Everything I did was geared towards stocking my freezer with single servings, and I spread this over 2 days to make it easier. The recipes: A chicken fajita kit idea I had while I was at Costco the other day. You do it on a per chicken breast half, and you basically just cut it into small fajita sized peices, season it with your favorite seasoning mix, and flash freeze the seasoned meat peices. Then per pile of you meat, you cut up 1/2 each of green, red, yellow, and orange bell peppers, plus 1/2 an onion. I sealed kits of chicken plus veggies in two connected foodsaver bags. When I was done I had 8 kits, so I used 4 of each of the veggies and 8 chicken breast halves. Each kit makes 2-3 servings. Let me know if that doesn't make sense. Double batch of Potato Chip Chicken, with the chicken peices cut into fingers. When I make this for the freezer, I do a dip into seasoned flour, a dip into an egg wash, and then a dip into the chip coating, I find it adheres better. Double batch of Microwave Meatloaf. Double batch of Macaroni & Cheese. Meatballs for Spaghetti Sauce [freezer]. So you need the ingredients for the above recipes, sheet pans and waxed paper for flash freezing, and a ton of foodsaver bags or freezer paper. So my order went like this, over two days, with long pauses while I waited for something to flash freeze. I know it looks skimpy compared to some other plans, but what a lot of vacuum sealing! An OAMC (Grown-up) Lunchbox My husband works in a remote area, far from any restaurants and microwaves. He has been taking ramen noodles to work for lunch for the past 3 months and is absolutely sick of them. I decided to do an OAMC lunchbox for him, taking into account the fact that he couldn’t heat anything up. He also requested that some sweets be added to the list of recipes so that he could have a “complete” meal. Instructions: The Recipes: Lunch in a Loaf - make a triple batch of the dough Oriental Mini Meat Loaves With Honey Garlic Sauce – make a double batch with ground meat (half meatballs and half loaves); sauce optional Eggplant (Aubergine) Antipasto – make a double batch (to be eaten on crackers and with the pizza roll-ups) Ham Salad Sandwiches – make only the filling OAMC Chicken Fried Rice Pizza Roll-Ups (OAMC) – you don’t need to make the tomato sauce (use Eggplant (Aubergine) Antipasto) Bar B Que Chicken Basil Calzones (Oamc) – only make the filling Super Moist Super Easy Banana Bread - OAMC – make muffins instead of loaves Uncle Bill's Whipped Shortbread Cookies Lime, White Chocolate and Coconut Muffins These recipes together make about 15 calzones filled with three different types of filling. It also makes 10 servings of OAMC Chicken Fried Rice, 6 servings of Pizza Roll-Ups (OAMC) (with 6 servings of Eggplant (Aubergine) Antipasto sauce on the side), 4 servings of Oriental Mini Meat Loaves With Honey Garlic Sauce, 7 individual servings of Eggplant (Aubergine) Antipasto and 2 extra servings of Ham Salad Sandwiches to be eaten on crackers. You will also have enough desserts to accompany each of these meals. All in all, you’ll have about 44 days – about a month and a half - worth of worry-free cold lunches that can be mixed and matched! Containers needed: 48 quart sized freezer bags (Antipasto, fried rice, extra ham salad, muffins, cookies) A roll of aluminum foil (calzones, pizza roll-ups, mini meatloaves) Kitchen tools needed: Large skillet Large pot Several muffin tins Several large mixing bowls Two large baking sheets Food processor – helpful but not necessary Various assortment of stirring spoons, knives, etc. Task List: Remember – do this the night before! This is very important to do the night before – otherwise you’ll be in the kitchen ALL DAY the next day instead on only about 6 hours. Place all ingredients in labeled zipper type bags and place in fridge overnight. Makes for easy assembly the next day! Cooking Day: *** As stated above, this whole process took me about 6 hours without any interruptions or significant breaks.*** Prepare plenty of trivets and cooling racks either in your kitchen (if you have the counter space) or on a nearby table. Make the triple batch of Lunch in a Loaf bread dough and leave to rise. You will need to split the dough up to rise in two different bowls (unless you have a huge bowl!). You can also choose to add the basil to only one batch of dough if you like. However, I think the basil is excellent in each recipe - the Bar B Que Chicken Basil Calzones (Oamc), the Lunch in a Loaf (filled with Oriental Mini Meat Loaves With Honey Garlic Sauce meatballs and Ham Salad Sandwiches), and the Pizza Roll-Ups (OAMC). Make the double batch Oriental Mini Meat Loaves With Honey Garlic Sauce. Make half into meatballs and cook in skillet. Put the other half into muffin cups and bake in oven. Set meatballs aside. Make the Eggplant (Aubergine) Antipasto (this is SO quick because everything is pre-chopped). Put in big pot to simmer on back of stove. Make the Ham Salad Sandwiches. Set aside. Oriental Mini Meat Loaves With Honey Garlic Sauce should be done by now and set aside to cool. Your bread dough should be risen by this time. Roll out 1/3 of dough and make the Pizza Roll-Ups (OAMC). Bake. Prepare Bar B Que Chicken Basil Calzones (Oamc) filling. Set aside. Punch down the remaining bread dough and roll out about fifteen 8” circles. Fill 5 of the circles with Ham Salad Sandwiches, 5 with Oriental Mini Meat Loaves With Honey Garlic Sauce meatballs, 5 with the Bar B Que Chicken Basil Calzones (Oamc) filling. Pinch shut into half moons. By the time that you’ve done this, your Pizza Roll-Ups (OAMC) should be ready to come out of the oven and cool on racks. This leaves room to bake the 15 calzones on two large cookie trays. While calzones are baking, turn off Eggplant (Aubergine) Antipasto which should have simmered down nicely by now. Set aside to cool. Make rice for the OAMC Chicken Fried Rice. While rice is cooking, start wrapping or bagging the food that is cool enough to go into the freezer (I was able to wrap the Pizza Roll-Ups (OAMC), the Oriental Mini Meat Loaves With Honey Garlic Sauce and the extra Ham Salad Sandwiches by this time). This will make room for the calzones and the cookies to come! Don’t forget to keep an eye on the rice! There’s nothing worse than cleaning a burnt rice pan.  Check the calzones. If they’re ready, take them out to cool. If they’re not, keep and eye on them while you stir-up the Super Moist Super Easy Banana Bread - OAMC. Put batter into muffin cups and put into oven. Finish assembling the OAMC Chicken Fried Rice. Set aside to cool completely. Stir up the Uncle Bill's Whipped Shortbread Cookies. Once the Super Moist Super Easy Banana Bread - OAMC muffins are done, put in your first batch. *** The timing for this part is subject to how quickly you can complete certain tasks. Feel free to make adjustments according to your own speed – that’s what’s so wonderful about cookies batches. You can put them into the oven as you see fit.*** While your first batch is baking, wrap the cooled calzones for the freezer. This will make room for the many cookies that this makes. While your second batch is baking, stir up your Lime, White Chocolate and Coconut Muffins. Put into muffin tins. When second (or third, depending on how quickly you can stir up the second batch of muffins) batch of cookies comes out of the oven, put the muffins in to bake. While muffins are baking, this will give you time to bag the Eggplant (Aubergine) Antipasto into about 13 individual servings. This freezes beautifully flat! Then, bag the cooled Chicken Fried Rice which also freezes flat when put into freezer bags. Take muffins out to cool and put in last batch(es) of cookies. Once cookies have all cooled, wrap muffins and cookies in desired portion sizes and slip them into your already very full freezer! Finally, have someone take you or take yourself out to dinner for your favorite meal because YOU DESERVE IT! Labels: The wonderful thing about these recipes is that they were chosen because they taste good when cold. My husband just reaches into the freezer every morning, chooses what he want to eat that day and slips it into his bag. When lunch comes around, the food is defrosted and ready to eat! You can, however, warm most of these recipes up nicely with a minute or two in the microwave. I just take an indelible marker and note the name of the recipe and the date that I made it on the freezer bags and/or tin foil that I’ve used to store the food in. On Menu: All Purpose Ground Meat Mix Taco Bagel Bites (Oamc) Our Family Favourite Crock Pot Chili (Oamc) Beefy Chicken Loaf (oamc) Hubby-Will-Inhale-Them Meatballs Ospidillo Cafe Spaghetti Sauce if desired make your own homemade Bulk Taco Seasoning Mix INSTRUCTIONS: You will need: 3 large ziploc freezer bags 3 large rigid freezer containers (min. 8 cups capacity...10 cup is better!) Or 3 large ziploc bags 4-6 medium ziploc freezer bags saran wrap 1 loaf pan 2 cookie sheet 1 Large mixing bowl 1 Medium bowl 2 large pot Appliances: a food processor will make chopping a breeze! PREP WORK LIST Sometime before your Cooking Day, finish these tasks: **TIP** placing prepped items in Ziploc bags will cut down on dishes you’ll need to wash. Make sure to label the bag with the ingredient, amount, and recipe it will be used for! Then on the Big Cooking day, you can just dump the pre-measured ingredients in with the rest of the ingredients! *Cut mini bagels in half for Taco Bagel Bites (Oamc) *dice 1 red pepper for Taco Bagel Bites (Oamc) *dice green pepper, 1 for Taco Bagel Bites (Oamc) and 1 cup for All Purpose Ground Meat Mix if using. *chop onions, 1 for Taco Bagel Bites (Oamc), 1 for 101273, 1/4 onion for Hubby-Will-Inhale-Them Meatballs, 1 large for Ospidillo Cafe Spaghetti Sauce, 1 for Beefy Chicken Loaf (oamc), 2 cups for All Purpose Ground Meat Mix *grate or cube 1 cup cheddar cheese for Taco Bagel Bites (Oamc) *grate 1 cup cheddar cheese for Our Family Favourite Crock Pot Chili (Oamc), if desired (freeze grated cheese in a ziploc bag attached to container or bag containing Our Family Favourite Crock Pot Chili (Oamc) to use for garnish) *make Bulk Taco Seasoning Mix if desired for Taco Bagel Bites (Oamc) and Our Family Favourite Crock Pot Chili (Oamc) *chop 2 cups celery for All Purpose Ground Meat Mix The Cooking Day In one of the large pots, combine the ingredients for Ospidillo Cafe Spaghetti Sauce and bring to almost boiling, then reduce heat and simmer for 3 hours, stirring occasionally. In the second large pot, prepare All Purpose Ground Meat Mix according to directions. Using 2-3 cups of All Purpose Ground Meat Mix, prepare Taco Bagel Bites (Oamc) as directed. Place completed bagels onto a cookie sheet and place in freezer to flash freeze. In large bowl, combine ingredients to make Our Family Favourite Crock Pot Chili (Oamc) using two cups of All Purpose Ground Meat Mix. The ground beef is already cooked, you don't have to heat the entire recipe before freezing, just stir to combine and then ladle into a large rigid freezer container or ziploc bag. (The container will be easier to reheat in, but the ziploc will be faster and will take up less room in the freezer..it's your choice) Now label and date your finished product and place into freezer. Divide remaining All Purpose Ground Meat Mix into 4-6 medium ziploc bags. Label, date, and put into the freezer. This can now be added to recipes using ground beef and will cut prep time in half! Here are some Ideas for using the cooked meat Wash large bowl and dry. Preheat oven to 350 degrees. Combine ingredients to make Hubby-Will-Inhale-Them Meatballs. I always bake the meatballs instead of frying, but again, it's your choice. Baking is quicker and less messy! Bake on cookie sheet or fry meatballs until cooked through. Cool completely and then pack in a ziploc bag. If they are completely cool, then they should not freeze in one solid lump but individually. Label and date and place into the freezer. Serve meat balls your favourite recipe or use one of the recipes from This Collection Rinse bowl and then add ingredients to make Beefy Chicken Loaf (oamc). Press mixture into a loaf pan and top with sauce. Cover with saran wrap, slide into a large ziploc bag, label and date. Place in freezer. After the three hours, you can simmer the Ospidillo Cafe Spaghetti Sauce longer if you wish, Pour the sauce into 2 large rigid containers or 2 large ziploc bags. (Again....The container will be easier to reheat in, but the ziploc will be faster to thaw and will take up less room in the freezer...it's your choice) Cool completely to prevetn ice crystals from forming (I always cool sauce overnight in the fridge and then move to the freezer the next day) Label and date the 2 items. Transfer frozen Taco Bagel Bites (Oamc) to a large freezer bag. Label, date and put back into the freezer. Labels for Recipes If you copy and paste these into a WORD document and change the font to 8pt (I use comic sans MS), these should print perfectly on address labels 121o86 Taco Bagel Bites Date: Bake from frozen at 350 degrees 20-25 minutes or until heated through. 101273 Family Favourite Chili Date: Thaw overnight in fridge. Dump into crockpot and cook on low 4-6 hours or heat through on the stove top or in microwave. 87537 Hubby will inhale them meatballs Date: Reheat over stovetop or in the microwave. On the Menu: Pork Chops With Raspberry Glaze Thai Marinade for Pork Chops Sassy Pork Chops Pork Machaca (Tender Pulled Mexican Pork) Easy Shredded Beef or Pork Enchiladas Skewered Five Spice Pork (Oamc) With Vegetables Curried Pork with Rice You will need: 9 - gallon size freezer bags 3 - quart size freezer bags 9 x 13 baking dish Special equipment needed: Crock pot Instructions: Task List: Do this the night before! Place all ingredients in little zipper baggies with the recipe name on the front. This way you can just dump into the recipes as needed. Get some rest! Cooking Day: Stand back and admire all your hard work! Labels: I like to use the bigger 2" x 4" labels. Avery makes them and calls them shipping labels. Use comic sans 12 pt. font. Pork Chops With Raspberry Glaze Date: Thaw in fridge. Brown chops in pan 5 minutes per side. Pour sauce over chops and continue cooking another 5-7 minutes or until done. Thai Marinade for Pork Chops Date: Thaw in fridge. Grill or bake as desired. Sassy Pork Chops Date: Thaw in fridge. Dump chops and sauce into crock pot. Cook on low for about 8 hours or until tender and cooked through. Skewered Five Spice Pork (Oamc) With Vegetables Date: Thaw in fridge. Skewer pork and vegetables. Grill or broil until cooked through. Curried Pork with Rice Date: Bake from frozen at 375 degrees for 55-60 minutes. OR microwave on medium high for 5-7 minutes until hot. Easy Shredded Beef or Pork Enchiladas Date: Thaw in fridge. Bake at 375 degrees until hot and bubbly.Sprinkle with cheese the last 5 minutes of baking. Pork Machaca (Tender Pulled Mexican Pork) Date: Thaw. Reheat on stovetop or in microwave. Serve in warm tortillas.
